After I watch the TV shows and now the movie I make a beeline to the kitchen and start chopping onions...and what happens? I cook ! What an inspiration these two are, and always will be... Thanks to them both for inspiring so many to follow in their path not only professionally but in countless homes across the country. Thank you Julia, Thank you Jaques.
The best moment of this series is towards the end of the episode where they made picnic sandwiches and Jacques asked what wine Julia would like......and Julia replies: I LIKE BEER!!!! and Jacques asks where his wine was, and Julia told him that they would be drinking beer. Classic!!!!
Ever since I saw the movie I have been enchanted by Julia Child! I know my Mother watched her show when I was a little girl and I saw a few shows when I was older (reruns) but now i want to get her cookbook and try some french recipes. I am reading her book "My life in France" and it's great. She lived a fascinating life!
I don't work for ALaCarteTV, but I can say that any serious home cook MUST have this series. Its truly a cooking course in itself. I have it on VHS when it first came out...now ready to upgrade to DVDs
I agree with Julia on the cooking the flour and the spinache: Spinache braised for 10-15 minutes tastes SOOOO much better, even if using frozen. As for the chicken fat, I agree there too. I'm going to die anyway, might as well have something good to eat while I'm waiting~.
Julia child on mashed potatoes: "The thing about mashed potatoes is that you could put as little butter or as much butter as you want. And for those who are afraid of butter, as many people are nowadays, I just use cream."
I bet it was Jacques. And even if the machine beat him, the machine didn't know it was on the same show as Julia Child! So, M. Pepin wins in any case, hehe. Such a great show, with two great chefs jokingly jabbing at each other, in addition to such wonderful food they make.
I always found it weird that Julia insists on blanching spinach and then squeezing the water out before sauteeing. I find that just sauteeing works quite well, especially if you have very good quality spinach. I see that Jacques Pepin also agrees.

re. cooking spinach, Jacques is correct about the nutrients and the flavor having a corelation. It's better not to boil it too hard
