For a little bit of personal veg I’d recommend planting a couple pots with tomatoes or peppers and keep them up against the facade. They look nice and you’ll have a bit of veg!
With the idea of a large outdoor structure, you have timber on your property, now would be the time to fell the trees and let them age so you could use them in 6 month. There was a tree guy on the chateau diary channel with Stephany, not sure if you have seen it. They are milling their own lumber for a structure in their walled garden. Here in the middle of the US, there are people running goats on their property to clear brambles and overgrown areas. Is this a possibility for you. Will you expand more apartments than the four slated, small areas like the piggery or part of the work shop building. Tenting area near your lake for summer travelers. Out house and showers for the campers like the KOA campgrounds here in the states...$10 a night and a electric plug and sewer dump.

Now that you have some good contacts perhaps you could do ‘event’ nights every month, with food, drink and music. Pre booked tickets so that you know how much food you need etc and have less waste and a monthly income …. Using your equipment investment and using the grounds when the weather is good. In the summer it would be stunning.
Exactly my thought has been bed and breakfast Friday dinner night with Ted's band on fri and sat. You don't have to be open everyday weekend business is the best plus your renting should make a nice income

Castle Ten Berghe has a structure out in their woods, if you want to take a look at it. About the size of a shipping container. That would be a great idea for guest and volunteers. Especially ones who don't mind roughing it. Using solar power and compostable toilets.
Lovely to hear your plans but sorry to hear the tearoom didn’t bring in more euros for you, having had a pub ourselves, we know catering is hard work with not always a deserved financial return. For what it’s worth, our experience showed that catering for events brings in a much better income, as you have the experience and equipment, perhaps you could bear this in mind? With regard to more income, other French property u-tubers have had a big increase in subscribers after putting out short videos on a daily or at least more regular basis and after asking present subscribers to recommend them to friends - just a thought. Think your plans for the grounds are great and perhaps volunteers to help. A basic, seasonal campsite in your field could bring people in and bring more income too, especially if you do decide to provide basic refreshments. Whatever you do, I and many others, really enjoy your videos and will continue to follow your progress, with great interest and will continue to support you. By the way, many new u-tube viewers do not realise that they do not pay to be a subscriber, since subscriber seems to indicate some money changing hands. Perhaps you could emphasise that point at the end of each video, in the hope that casual viewers will perhaps be persuaded to subscribe.
Landscaping is definitely important, winter interest such as a variety of evergreens could be mixed in among summer plants. A beautiful garden that pulls you in. I’m a gardener and think how wonderful it would be to help in that area.

I like the French style workaway, board n food in exchange for work. Just the plane tickets would cost 3,000 to be able to volunteer. And the french workaway system is work 4 days off 3 , although I'd happily work 7 .
Completely understand you were too busy to make videos, but I must say I'm looking forward to seeing your next room reno. I had mentioned this before when we lived in Belgium we used to go for coffee/tea/chocolate (complete) was the name you only chose the drink then on the tray has 1tiny ball icecream 1 tiny piece of apple cake 1 chocolate (artisan) 1 shot glass chocolate liquor 1 biscuit we loved it it was expensive too €6.50 per person in 2005 sometimes you couldn't get in it was so full it was the whole (thing) of this tray full of these miniature goodies. Crucially no waste as I apple cake would do 20 portions the biscuits don't go off all the other bought in. See you soon

Have you considered swapping lodgings and meals for labor, I know of a couple who worked in a winery three or four days a week for room and board and then would tour France on their days off. This was pre covid but maybe list in the local college web sites for Horticultural Schools, you get labor with people who know plants and they have a home base so they can travel the area. Just an idea.

What a fab room, we have a real woodburner but before that we had an electric fire that looks just like a wood burner, so much so a friend opened the door and through a sweet wrapper in to burn. Something like that maybe the answer, you get the look but not the fire risk. X

When you were talking about revenue on RUclips and clicking on subscribe for income and the adverts but was so surprised the whole vlog did not have a single Advert which was a shame as I know it takes a long time to download. I’m confused when you say you didn’t make a profit / didn’t make money with the tea room yet you say you were able to purchase supplies because of the tea room. You therefore did make money but needed to re-invest int the chateau restoration. If you didn’t make money, you either broke even or lost. I doubt you would have continued as you did if you didn’t make money on it. As for the “chateau” category on RUclips, I have several categories on my tablet & smart TV but not my phone. I also show some chateaus in a “home renovation” category. I have no idea how you get in there. Also, I watched your complete Q&A and there wasn’t one ad!! I have had ads on your channel before but not tonight. Why are your dogs allowed on furniture when you intend to rent these units with this furniture. I wouldn’t be happy with furniture smelling of pets. That’s just me but I’m sure others would feel the same.
Maybe get a couple of donkeys on the land to keep it grazed, a couple of bell tents in the woodland for Glamping would give you extra income

Grow a garden it will help with grocery bills. I lived out of my garden one summer when I was haveing money troubles.

Yes I thought the same thing ..then Ted and Lesa could get a "rent" even if not a lot, and it would help fund the renovations which they clearly much prefer doing.

I’m confused when you say you didn’t make a profit / didn’t make money with the tea room yet you say you were able to purchase supplies because of the tea room. You therefore did make money but needed to re-invest int the chateau restoration. If you didn’t make money, you either broke even or lost. I doubt you would have continued as you did if you didn’t make money on it. As for the “chateau” category on RUclips, I have several categories on my tablet & smart TV but not my phone. I also show some chateaus in a “home renovation” category. I have no idea how you get in there. Also, I watched your complete Q&A and there wasn’t one ad!! I have had ads on your channel before but not tonight. Why are your dogs allowed on furniture when you intend to rent these units with this furniture. I wouldn’t be happy with furniture smelling of pets. That’s just me but I’m sure others would feel the same.
