In Thailand from the north to south you can say "kin" or "tarn" meaning "eat" but "tarn" is more polite. That is it. Really enjoyed your hungry adventures. Have a great time💕😊

Hi Mickey, the desert you bought at the end was Thai custard with black sticky rice and the purple color on the rice come from butterfly pea flower aka Asian pigeonwings.
also you could find the green variant made from Pandan leaf.
Eggs custard that cook from eggs,palm sugar and coconut milk.mix well and steam
They are so friendly and nice people in Issan.
Great to se you try food you never try befor.

Well the purple colour in sticky rice made from butterfly pea flower , p.s. the vegetable you ate with PadThai was Chives not Spring Onion but it's similar taste :)

You've had that coconut sticky rice with steam egg custard before from what I recalled perhaps from one of your floating markets in BKK except the rice was not cook with the butter pea flowers. Now a day it's popular to add butter pea flowers water to turned food or drinks on Thailand to give it a purple or dark blue color. ☺ And the custard made with beat eggs mixed with coconut milk and palm sugar then steamed.

The topping' s made from egg, sugar, coconut milk and add some colored stuff, usually vegetables such as pandan, green tea, thai tea, etc.

Yes the way you've been using the word 'Kis in eat us correct however technically 'Kin' mostly used with someone you're friend with or someone same age as you or younger and the proper polite way to speak to someone that you don't know or older is 'Tarn' and there are also word 'Chun' for monks and 'Sa Voy' for the royalty.
