Thanks chef akala ko mali ang method ko s pagluto ng pitchi kc others are squeezing the liquid out of it which I did when I first made pitchi you're right it becomes flavorless.. the addition of butter I guess adds up to the flavor but can it be omitted if it will be for selling or the taste will be different?
All cassava contains a certain amount of cyanide which is completely eliminated when the cassava is cooked thoroughly. As long as you eat a well-cooked cassava, you have no cause to worry. By the way, may I also add that squeezing out the juice from the cassava does not take out the cyanide. That is a myth. I have cooked with cassava for over 40 years and never did I ever make a cassava recipe when I squeezed out the juice. When you squeeze out the juice, you are left eating only the "sapal". Yes. You can use water instead of coconut milk. You can omit butter. Difference is flavor. Mas masarap with butter.

I always use frozen cassava. I do not squeeze or drain the cassava before using.

You can omit butter or margarine. It is for flavor. There is a slight difference in the taste but not that much!
