Hi Cecilia, after adding yeast mixture to the batter the fermentation depends on the climate, if it is humid fermentation will happen quickly so keep checking the batter if it has risen every hour or so, (it took me about 6 hours because when I made this recipe video it was winter here), no need to refrigerate the batter

Please could you specify whether the raw rice should be soaked . If so, how long, as also how long should the yeast solution be kept aside before adding it to the batter. How long should the batter be kept aside before pouring it into individual moulds. Thanks

This is a clever recipe though I will say I do it the Goan way and let the batter ferment overnight it has better flavour..These are my fav things on a hot day with a Vindaloo and some Sannas what is so wrong with that oh and maybe some pickle we all love vinegary things..It's just superb :-)

Hi Ryan, I know that toddy is used in authentic sanna’s recipe, toddy isn’t available where I'm based, so I have used yeast instead, if you’re using toddy you can use 1 cup of toddy (i.e. 250ml) instead of water to grind raw rice and coconut and follow the same recipe. Also fermentation of the batter depends on the climate, if it is humid fermentation will happen quickly so keep checking the batter if it has risen every hour or so, (it took me about 6 hours because when I made this recipe video it was winter here)
Hi, basmati rice is not “raw rice” and is not recommended for this recipe, you can use any white raw rice, if white raw rice is not available then you may use parboiled rice for this recipe 🙂

Mam I made with idli rice. You have made these sannas with which rice goa red rice or boiled rice
I have used raw rice
I made of idli rice and to ferment it took me 6 hours
Today I will try of goa ukde rice / goa red parboiled rice. Will let you know tomorrow how many hours it takes to ferment
