Do not let tawa to be too hot. Lower the flame after you remove cooked dhosa and sprinkle water at that time. Maintaining tawa temperature during dhosa is most important. I experienced it with non stick tawa. I was about to throw the tawa but its working now.

I faced these kinds of issues too but my mum taught me to always season the tava with an omelette after the wash. This trick always works for me. Never had a bad day with Dosa's.

In South India, it is more traditional to apply oil with a coir brush (rather than a silicone brush). Alternatively, people also use a "potli" out of cotton cloth to smear oil on Tawa. Commercial oil applicators are also available, looks like a wooden stamp with cloth wrapped around it.

    Never grease oil from backside.🤦🏻‍♀️

Sister...cast iron tawa are best instead of nonstick...only thing is you need to set it right....before pouring batter use cut brinjal and put oil on cut side.Apply oil slightly on tawa and then pour corect batter...Cover and cook for best results. Only one side.... perfect for south indian dosaa

Firstly, understand the difference between Cast iron and others.
Even if it says Pre seasoned, you have to season it again over 3-4 days with
    Diluted cooked riice water
Soak the entire tawa in it in a large tub after first cleaning it
Do this for 2-3 days in fresh ricecwater
    Then again clean it
And finally, smear it with oil on all surfaces- top bottom both, and then dry roast some chana dal, coconut grated by spreading it on all parts of the top surface for few minutes.
    Discard the roasted stuff
Now it's ready to use, after wiping clean the tawa.
Do all the above, and then release a video

I'm from South Africa 🇿🇦. My tawa is over 100 years old. It belonged to my great grandmother and I also have my mother in laws one. They work perfectly. I also have my granny's kadai/karahi and my mother has a set of pots from india we call it the india dotted pots they all alot better than the stuff u fine in shops now days. Here in S.a almost everything in shops is non stick coated, non stick isn't good for health. I prefer using cast iron and stainless steel

For dosas any very thick tawa works but flame always has to be low, but should not see steem. Tawa was too hot showing steem. That should not be hot. Even this tawa works if it is very thick. First dosa sometimes stuck to the pan but later those seperates automatically.

First of all, your batter is very thin , you need to have slightly thicker. And the first dosa you make after seasoning the pan, just pour half a ladle full of batter, but do not spread it. Let it cook on medium heat and then slowly you can start making bigger Dosas. You cannot fail if you follow these methods.

You need to season it properly... That's why...I have been using it for many years now... it's the best.If you use it multi purpose ..i e for roti, sandwich etc, then just in case dosa batter sticks to it,rub it with half an onion and some sprinkled salt.. Also a little oil before pouring batter each time

Correct. Make first a small dosa...then slowly increase the size and thinness..

I am using the ordinary iron tawa but following all the basics of dosa preparation as mentioned in the comments.

Apka dosa batter bohot watery hai.. I purchased cast iron tawa two weeks back.. mainly temperature maintain hona zaruri hota hai.. I m super happy with the cast iron tawa as dosa come out very nice.. season it after washing with normal water and wash it with plain water, without using any dishwash liquid..
