You guys need really good Nonstick pan. No need to go out and Buy a crepe pan. A tiny amount of either very good oil or very good butter, please don’t do too much . everybody thinks they need to oil everything too drown so that it doesn’t stick but it just makes the batter float and your crêpe being uneven and browning too much for this recipe For such thin crepe just a small amount of batter like in the video And the most important tip that everybody does wrong with crepes omelete etc do NOT TURN THE HEAT TOO HIGH!!!! If your pan is too hot they won’t spread evenly, they will brown to mutch, they will cook unevenly, they might still stick even in a nonstick pan with oil . Now for the actual flipping, wait until the top has no more liquid that’s running if it’s light and completely lifts off the pan with a spatula like in the video you can flip it with the spatula and pull it into place like she did. If you got a crepe that’s too thick or so thin it might tear, move the pain a bit so that it’s loose if it sticks it someplace carefully help it with the spatula so that it’s moving like a piece of paper inside of your pan. Let it slide onto a plate possibly even pulling the pan from one side of the pan to the other while the crepe is sliding of so it’s centred. Now the Uncooked side of it should be lying on top on the plate, flip the pan so you see it’s bottom place it over the plate and then a swift motion twist it so that the pan is on the bottom, plate is on the top and the uncooked side of the crepe now lies inside the pan. Take the plate off, correct the position of the crepe And finish cooking on the stove
