Honestly, I'd always thought the anger stemmed from Carlos cheating with their surrogate. Like, at that point Gaby didn't think she could have children. She also didn't want them to begin with but changed her mind about it because she knew it was something Carlos wanted. So in her mind, Carlos sleeping with the woman physically having/carrying their child (and not Gaby because she couldn't), was seen as the bigger betrayal.
One thing that did anoy me was the amount of times after this Carlos would bring up John Rolland (yes he did show up a few times) but Gaby never cheted on Carlos again. Gabby justified the affair to herself with the unhappiness she felt in her life (like an important part of the encounters happened after Carlos said something harsh to her.)
She really resented him but stayed for financial stability.
