I see you rolling without the tuning plates, i have a question i need help with, i want to go back to using mesquite wood more but is it just me mesquite that mesquite doesn't bring you up to the cooking temperature fast like oak or pecan? Now it's all good once mesquite has caught fire and burned for a little 🙄or what am I doing wrong with that mesquite uncle b😂
No I haven't used the tuning plate in a while. Mesquite doesn't burn as hot and it tends to smolder more giving you dirty smoke if you don't get it hot enough.Just make sure you let it get hot, that is what you not doing.😉 Hopefully this helps. Most people don't use straight mesquite, they usually mix it with another wood.
