It will probably be very easy but also very fun to do exactly once. As an upside the shop phase will not take as long as with other characters with harvesting focus. I want to see if you can beat your harvesting record with this character. I think its very possible.
One way to play could be to get lots of luck and get crates as a way of getting shop items. Also because of how harvesting is coded, it actually increases by 12.5% each wave, and Crown would make it 32.5%. Assuming you have Crown and let's say 100 harvesting at the beginning of wave 10 and get no more from items/level ups, at the beginning of wave 19 you would have 1260 harvesting.
Crown would be very good on this character, you get x2.5 stats, it ended up multiplying the base 5% to 12.5% increase every wave, Crown would add another 20% per wave, this is probably why the item price is scaling every wave to balance out the harvesting scaling
I tried Pitchfork Extremist as per your suggestion, and can confirm that it's absurdly overpowered, easily my most broken run. By the end, I had 27442 Harvesting, 845% Damage, 1645% Attack Speed, and was doing ~67k damage per hit. I one-shot both final bosses, finishing Wave 20 in ~2 seconds. There's a small early point where it's a little sketchy because you've got all your limited resources in Harvesting and you're still looking for Pitchforks... then you get them all and the compounding interest starts to explode, and suddenly you can buy everything you want from the shop, up to the point of buying silly things just to make them stop appearing, because even with shop prices increased hugely, you've still got vastly more money than you need.
I, for one, would absolutely love to see a bonkers broken run with this character. Some of the wildest episodes you've done have when you either intentionally or unintentionally broke certain characters.
I played this character with pitchforks and had about 20k harvesting by wave 12. With crown harvesting doubles after every round which lead to the first true 1 hit of the final bosses ive done.

Same happened with Luck be a Landlord playthrough you had a while ago. Doesn't happen every day, but somehow your videos are a great way to kickstart a day for me

Would be super interested in seeing the harvesting run you mentioned once all the other characters have been played!
Id have loved for you to get community support, 2.5% attack speed for each living enemy would have been insane haha and I would also love a harvesting run on this char, just for the giggles!
I really thought this character would be awfully weak but it's actually really strong which is really counter intuitive for me, I'm excited to try going pure harvesting in my run
Did you unsub and resub to the unlock mod? That's what fixed it for me. Also, I again highly recommend the improved tooltips mod. Especially for characters like this so you can actually see what is changing the stats
Something I’d like to see, only if you’re down of course, is you replay Extremist but mainly focus on luck I feel like that might offset the item price penalties to a degree because you’d be finding more items naturally
My thinking with this character is that the way the numbers all work together is just kinda weird maybe? Af first glance at least. It’s like… you’re getting 2.5X the main stat from anything you buy, but item prices are insane. Then the 40% weapon price reduction factors in at the end but you wouldn’t necessarily think that either. Then also the 50% experience down makes you think you’d be getting half as much EXP, but the way exp gain is coded means you’re taking 1.5x longer to level. So instead of a hypothetical 10 experience for a level, you need 15 but then you’re getting 2.5 health and 2.5x whatever stat you choose. I dunno the math is mathin basically LOL
wouldn't luck be lowkey OP for this character just on the basis of extra crate drops? As would extra enemies - as it essentially also gives extra XP if you kill them all.

Gave it a try with the Hoe weapon, switching to Pitchfork about halfway through.

playing him with a versatile weapon (axe is perfect) is basically a free win
