Ive been to many Asian countries were outdoor food was in a glass display along with horse flys...this is cleaner. Now the sharing of water pitchers without a cup as seen in other videos is another story.
In home made food business, it's pretty common to get a 50% ratio of profit margin, well at least in Asia... So an extra scoop of rice or meat curry won't hurt him that much

I used to go to this small restaurant for lunch... it's a self service system, so after eating you go to the owner and pay for the food you ate i've often saw a blue collar worker filled their plate to the brim with assortment of food everyday yet the owner never having an issue with this... the last thing i know she is currently building a rent house near the restaurant
