My favorite way to cook Jiffy corn muffin mix is to add half a cup of milk instead of 1/3 of a cup and add about 2 tablespoons of canola oil. Then, instead of baking it in the oven, I cook it in the waffle iron. We called them corn crispies. Fabulous with chili or an omelette. We've even eaten them with a scoop of ice cram on top and some strawberries or cherry pie filling.

Jiffy cornbread mix has lard in it. Check the ingredients list.
I like to put cheddar cheese and jalapeno in mine. Goes great with greens and black eyed peas.
