Matt, are the electrical connector Wago? I believe that all 3 sockets are linked on the pukka Wago connectors and if so anyone using them would be shorting positive and negative together. I have used Wago connectors from Screwfix and haven’t found any old style 3 lever connectors that are separate.
You could have kept it as a continuous led strip by threading it through a hole to the back at the end of a letter and then threading it through a new hole to the front for the next letter, eliminating the need to cut it and all the soldering.
