I’m pretty sure the world’s ‘tallest’ man-made structure is one that goes hundreds of metres below sea level as part of an oil rig or something (I can’t quite remember the details, but it is interesting as most people overlook things that go below sea level like the actual tallest mountain).

I know the Atmosphere restaurant even bills themselves as the tallest, but it would actually be the highest. It only takes up one floor of the building and there are plenty of restaurants (free-standing and otherwise) which take up more vertical space. The tallest wave ever was much more than 30m. Lituya Bay’s tsunami (which is what I believe is referenced here) was roughly 524m.
There was also a wave in Norway at 70 meters in 1934 after a mountain side collapsed into a fjord
