Instead of "measurements vary for a number of reasons" (which is not reassuring to a neophyte), she demonstrates how easy it is to determine how much is needed. Bravo!
Who's baking vicariously through youtube videos because YEAST is now rarer than TP? Edit: The bread came out nice! Not quite enough dough to fill two loaf molds and make the bread as big as I want, but I'm very certain I can just adjust the water, yeast, flour ratios to make up for that. For anyone making shaped breads (as you did here) it'll probably be exactly the amount. I love how you gave sensory instructions during different steps. I'd like to add one - If you touch the dough and leave a 1/4" indent with one finger then it's risen enough and can be punched down. It's very cold in my house so it took almost 2 hours for my bread to rise each time. Still came out great!

I had tried 3 other bread recipes and they all turned out very dense. I couldn't figure out what I was doing wrong. So that is why I decided to come to RUclips and find a recipe where I could actually SEE HOW someone was kneading and working with the dough. I have to tell you that I tried this recipe and it is not only easy, but delicious! Not dense at all! Thank you so much for your recipe :)

Omg I love my bread! I added a bit of cinnamon to mine and instead of egg to glaze it I made a small mixture of butter, milk, honey and a dash of cayenne pepper to glaze the top of my bread. It came out beautiful! Thanks for the video!!

That's one reason you see people all over the globe (where breads and flatbreads are common -even for poorish folk- are common) still having teeth, even long after our tooth brushing older citizens have lost or removed/replaced most of theirs! Supposedly, it's the processing, additives and other transient traces of "stuff" that's so hard to cleanse ourselves of that inhibit this healing and renewing process the human body naturally has.

Since we're in the middle of the ocean, almost everything is shipped in, which raises the prices of many items exponentially. Bread in the islands is incredibly expensive, like $6-7 dollars for a loaf of healthy & quality bred. So, I'm researching things that I can do on my own to help us become healthier & cut cost. This is the ONLY bread recipie I use. I found this in 2012 and have not stopped using it. It makes amazing loaves and I just love how simple the steps are. You are amazing girl!!!!
Give me regular french or Italian bread without all the other stuff. Just put butter or black berry jam on it with a cup of hot coffee. No tomato, garlic and herbs on it. I want to enjoy the bread not the other seasonings. After all you put a lot of time making the bread to enjoy the bread.
Thank you. I needed the technique more than a recipe. I asked my Mom over the phone (94 years) and she said, "Well, just do it enough and you'll know." Watching you helped me in handling the dough, and the yeast float really works. I was stirring the yeast and it wouldn't bloom right. Good stuff!

Slashing the top of the bread is not for decoration, its serves a very useful purpose which it to allow the outer layer to expand while the crust is setting so you get more use and a lighter and fluffier texture. The traditional way to slash is not across from left to right, as seen here, but rather in long stokes (nearly parallel to the sides), which yields a nice smooth elegant shape with a really good rise.
After slashing the dough its best to cover it so it does not dry out why you are waiting for it to rise again. The drying the outside gets the more it resists rising (wet dough stretches and rises, dry dough doesn't, as much).
This one of about four "how to" videos on youtube that are actually good. Tight and to the point. No blather, just the important information and clearly showing you what you need to do. This is a great video.
I just started baking my own bread from your recipe. I added thyme, sage and rosemary from my garden. Used unbleached white, stone ground wheat and rye flour. Took a loaf to work and my colleagues devoured it! Love this breadI Even my picky teenage daughter loves it. I may never buy another loaf again. Thanks!

Oh you are so sweet! You explain things so well. I have been baking bread for 30 years and this past year just got into sourdough baking. My latest challenge is making artisan rye breads. Talk about dense! Rye is a whole other animal. Anyway, I don't care one bit if you aren't shaping your rolls like the pros. We're all at different places along the journey. It's not like you're selling them anyway, so what counts the most is how it tastes. Obviously, if family members are snatching the rolls almost as soon as they're out of the oven, they taste great! I just adore your attitude. You have a fabulous smile and your family is so blessed that you enjoy serving their needs as you do.
I'm actually studying this vid in hopes to make the bread and I cried.... I never made bread before (being that I'm 22 years old and even being the second person bakes but the only one who does it by scratch since my aunt uses pre made stuff and even she never knew how to make bread) this actually made me the first in my family to make the darn thing!! But sadly didn't get to eat any of them (yea my cousins are jerks....) either way...them eating it usually means it's good... That is good enough for me so thank you so much for the how to recipe! I’m a home bread baker, doing it for years. I have to say, I still watch videos and this is one of the best, very thorough and to the point. I normally do no knead breads, sourdough and also enriched bread/rolls making dough in my bread machine. My only suggestion, I use instant yeast, buying in bulk. Great Video! Rob

I am Celiac and cannot have wheat flour. Can you substitute all purpose flour and wheat flour for rice, coconut, or another wheat gluten free flour? For the bread you make it look so good and delicious and easy. I recently started watching your videos. To have the seeds or cornmeal on the bottom do I add it onto the cooking mat then place the dough or do I put it on the dough itself then place it on the baking mat.
I added 4 ozs of tomato paste (from a bag not a can) about touch over a tsp of basil and the same amount of oregano with a handful of unsalted sunflower seeds. The whole family loved it, especially when using it to make grilled cheese sandwiches. Thank you for this great video. I look forward to trying many one different things with this.

I thought I was ready and my yeast was to old. My neighbor did not had any than a bicycle trip to the neighborhood little grocery. I bought something that was in a fridge that was 10 cents because it was expiring this week and an envelope with 3 portions. The one that was in the fridge did not work I forgot to put the honey! I tried for a third time with the envelope and it did work!!! so much time waist. The good thing is that I learn from my mistake. I have learn a lot this morning. Hi, Its May 7th 2018. I followed your recipe and added my own twist and my bread came out very good for a first time trying. I won't buy store bread ever again. Thanks for this you rock!
She tells u if your yeast is not bubbling and on the top in a frothy mixture to throw it out and start again. Here's what happened happens if you ignore that advice because you bumped the bowl and all the yeast sunk sunk to the bottom. You leave the mixture for 5 to 7 min anyway with towel on top of bowl. It doesn't bubble or froth. You continue anyway. Your bread takes extra flour to get thick and never rises. Then when baked comes out like dense disgusting tasting hockey pucks. :(
I truly enjoyed your your video the fact that you're using everyday items that anyone has and you are the only person that is mentioned that the amount of flour added depends on the humidity in the air on that day that you make your bread I found your tutorial very helpful and insightful more people should know the traditional way of making bread .

It's just me and I'm not big on eating bread mush and buying it in stores is too high. I used the money this time to buy the ingredients I came out cheaper and I can freeze what I don't use for later. You have been and are a blessing thank you. And as a instructor you've done an awesome job.

The traditional way to slash is not across from left to right, as seen here, but rather in long stokes (nearly parallel to the sides), which yields a nice smooth elegant shape with a really good rise.
After slashing the dough its best to cover it so it does not dry out why you are waiting for it to rise again. The drying the outside gets the more it resists rising (wet dough stretches and rises, dry dough doesn't, as much).

I just started baking my own bread from your recipe. I added thyme, sage and rosemary from my garden. Used unbleached white, stone ground wheat and rye flour. Took a loaf to work and my colleagues devoured it! Love this breadI Even my picky teenage daughter loves it. I may never buy another loaf again. Thanks!

Oh you are so sweet! You explain things so well. I have been baking bread for 30 years and this past year just got into sourdough baking. My latest challenge is making artisan rye breads. Talk about dense! Rye is a whole other animal. Anyway, I don't care one bit if you aren't shaping your rolls like the pros. We're all at different places along the journey. It's not like you're selling them anyway, so what counts the most is how it tastes. Obviously, if family members are snatching the rolls almost as soon as they're out of the oven, they taste great! I just adore your attitude. You have a fabulous smile and your family is so blessed that you enjoy serving their needs as you do.

I'm actually studying this vid in hopes to make the bread and I cried.... I never made bread before (being that I'm 22 years old and even being the second person bakes but the only one who does it by scratch since my aunt uses pre made stuff and even she never knew how to make bread) this actually made me the first in my family to make the darn thing!! But sadly didn't get to eat any of them (yea my cousins are jerks....) either way...them eating it usually means it's good... That is good enough for me so thank you so much for the how to recipe! Also I used raisins for this... Is that okay?

I’m a home bread baker, doing it for years. I have to say, I still watch videos and this is one of the best, very thorough and to the point. I normally do no knead breads, sourdough and also enriched bread/rolls making dough in my bread machine. My only suggestion, I use instant yeast, buying in bulk. Great Video! Rob

To have the seeds or cornmeal on the bottom do I add it onto the cooking mat then place the dough or do I put it on the dough itself then place it on the baking mat.
I added 4 ozs of tomato paste (from a bag not a can) about touch over a tsp of basil and the same amount of oregano with a handful of unsalted sunflower seeds. The whole family loved it, especially when using it to make grilled cheese sandwiches. Thank you for this great video. I look forward to trying many one different things with this.

I thought I was ready and my yeast was to old. My neighbor did not had any than a bicycle trip to the neighborhood little grocery. I bought something that was in a fridge that was 10 cents because it was expiring this week and an envelope with 3 portions. The one that was in the fridge did not work I forgot to put the honey! I tried for a third time with the envelope and it did work!!! so much time waist. The good thing is that I learn from my mistake. I have learn a lot this morning. Thank you so much for taking the time to explain so well. I had taken a class 2 months ago but it was with a package and not from scratch which I prefer.

Hi, Its May 7th 2018. I followed your recipe and added my own twist and my bread came out very good for a first time trying. I won't buy store bread ever again. Thanks for this you rock!
She tells u if your yeast is not bubbling and on the top in a frothy mixture to throw it out and start again. Here's what happened happens if you ignore that advice because you bumped the bowl and all the yeast sunk sunk to the bottom. You leave the mixture for 5 to 7 min anyway with towel on top of bowl. It doesn't bubble or froth. You continue anyway. Your bread takes extra flour to get thick and never rises. Then when baked comes out like dense disgusting tasting hockey pucks. :(
It even doesn't rise when left in sun for two extra hours. Booo.

It's just me and I'm not big on eating bread mush and buying it in stores is too high. I used the money this time to buy the ingredients I came out cheaper and I can freeze what I don't use for later. You have been and are a blessing thank you. And as a instructor you've done an awesome job.
