自制巧克力
1、2500g可可生豆用可可树叶包裹，放进40度~50度恒温发酵箱发酵10天。每天取出，吸干翻拌。
2、发酵后的可可生豆放入烤箱。
第一次：60度烘干4小时；
第二次：150度烤20分钟，每5分钟取出翻拌1次，重复3次。
第三次：135度烤15分钟，每5分钟取出翻拌1次，放凉1分钟后再入烤箱烤，重复2次后取出放凉，可可熟豆完成。
3、可可熟豆去外壳放进密封袋，用擀面杖压碎。
4、分20次（每次100g，间隔2分钟/次）加入家用可可精磨机中，直至所有熟豆加入后，精磨16小时。
5、精磨机继续运行，分8次加250g融化的可可脂，充分混合30分钟，再分8次加入250g无淀粉糖粉，精磨8小时。
*按照此比例可做出可可含量为80%的黑巧克力。
6、巧克力浆倒入不锈钢盆，隔水加热至50度~55度。取2/3倒在大理石板上调温。待其降温至28度时倒回盆中，再次隔水加热至30度。
*不锈钢勺蘸取少量调温巧克力，室温20度左右的环境中放置3分钟，如勺上的巧克力自行凝固且不沾手，即为调温成功。
蔓越莓巧克力板
1、170g调温巧克力倒入模具震荡平整，顶部依次放适量草莓干+蔓越莓果干+蔓越莓果脆+开心果。
2、冰箱冷藏10分钟至凝固，脱模。
蔓越莓巧克力小方
1、4个蛋黄+20g白砂糖，打发至砂糖小时，液体微微泛白。
2、100g牛奶煮沸+蛋黄液搅匀，倒回锅中全程小火加热，待液体粘稠顺滑，关火隔冰水冷却。
3、冰淇淋液：400g奶油+40g白砂糖，打发至尖角硬挺后冷藏。蛋黄液过筛拌入冷藏奶油，加3-5滴红色食用色素调色，装裱花袋。
4、冰淇淋夹心：
小锅中倒入200g蔓越莓果酱+60g高麦芽糖浆+50g饮用水煮至粘稠，冷却后装裱花袋。
5、组装：
冰格模具中挤入1/3的冰淇淋液，中心处挤夹心后用冰淇淋填满冰格。顶上放切碎的蔓越莓果干，刮平后冷冻8小时以上。
6、500g调温巧克力+杏仁碎，冻好的冰淇淋脱模，插上牙签滚巧克力液，取出放入冰水待15秒脆皮形成吼拔掉牙签。
*暂时不吃需放入冰箱冷冻，吃之前常温解冻10分钟可达到最佳口感。
棉花糖蔓越莓特调
1、杯中放6块冰块+6颗蔓越莓冻果，倒蔓越莓果汁至7分满，再用勺子贴住杯壁倒气泡水至8分满处做渐变效果。
2、可加棉花糖，放蔓越莓冻果和迷迭香装饰。
