Couple pointers if ya want em: Try pinching the very top (back, dull side) of the knife blade with your thumb and index finger while your other fingers are wrapped around the handle for much better control of your knife, (note it might take some experimentation to find whats the most comfortable/optimal position for you personally) it really feels like an extension of your body rather than a tool like this, in my personal opinion And lastly a knife of this quality and sharpness does not do so well on such a hard surface such as the bamboo cutting board (if it is bamboo in the vid, just sorta looked like it to me), it will basically dull your knife faster or could even chip it eventually if its a mostly carbon steel knife.
