Salted Mango (Uppu-manga / ഉപ്പുമാങ്ങ / Salted mangoes) are a unique dish which has a salty-sour flavour. It is prepared by keeping good quality raw mangoes in salt water. Once it is kept for a specific duration, the mango becomes soft and absorbs the salt flavour from the solution.
