    This thing is definitely insane! I was very skeptical on how you were going to stuff 5 birds into the turkey but somehow you did it! Boning all those birds seems like the hardest part though. I've never done it, but I'm definitely not a butcher so it would take me FOREVER. This turducken looks worth it though. This is a must try...someday...

    Big Al, you have done it again Man! Whilst we don't do Thanksgiving "Down Under", perhaps you could do it with an Aussie twist, a "Emcasturduken" - emu and cassowary as the outer fillings - haha. As always, your videos are thoughtful and inspiring. Many thanks and the stuffing sounds sensational. May you, your family and your subscribers have a safe, enjoyable Thanksgiving. May 2021 be Covid free !!! :)

      Thank you so much Johnny! An Emu and a cassowary sound like fun. I was thinking maybe an ostrich would be enough reason to buy A BIGGER SMOKER for next year? Shhhh don’t tell Mrs EMV!!!

    Love it! Was it difficult to get it to cook evenly?

    • @BehindTheFoodTV
      @BehindTheFoodTV  4 года назад

      Great question, Chris. One of the benefits of brining is that the moisture is retained in the meat. That helps the heat to transfer to the center more quickly. The stuffing layers help with that too. In addition the layers of meat get thinner as you get closer to the center. So remarkably, it’s pretty evenly cooked and moist consistently as well!

      Err how much do you know about the Cassowary ?? From Wikipedia, it accurately describes what I know... “Cassowaries are very wary of humans, but if provoked they are capable of inflicting serious, even fatal, injuries to both dogs and people. The cassowary has often been labeled "the world's most dangerous bird" “

      Hi Andrea! So funny I told my wife this morning that I was going to message you because I hadn't heard from you in a while! The stuffing video goes up on Wednesday at noon ET. The only thing you'll have to change is that I used pork rinds, so to keep it kosher you'll want to use bread or another bread substitute (maybe almond flour bread?).
