Fishcake is pretty common in various asian cuisines. The one they had in this video is more like a thicker crepe that was then folded & put on a skewer & cooked in a broth.

The fish cake is just sliced to extremely thin and got put on the stick in a folded form (so they don't break). There's not much to it.

oh also - for fish cakes, or fish balls, are just white fish meat mixed with flour, salt & sugar; then they are either braised or fried, depending on your preferences. also depends on the type of dish served. it can be part of a hotpot, it can also be part of the grill in the bbq.
commonly found at most Asian grocery stores.
