I made this for me yesterday. Regular pumpkin for our guests but some guests tried mine too and loved it. It was delicious and easy. I almost burned it but the almond flour crust still tasted good being dark brown. Also, the foil got stuck to the pumpkin filling but I smoothed it out with a knife. It looked beautiful. Hello, I made your recipe for Thanksgiving. My son is on a keto diet, so he can't eat the regular pumpkin that we have for Thanksgiving. I saw your recipe and decided to make it for his dinner. He really enjoyed this pie with sugar free whipped cream. Thank you for all your wonderful recipes.
Love your recipe. Just what we needed. But we have to cook according to our needs and what we have, so here are our switches and substitutions. Almost out of almond flour, so it will be a mix with flax and chia seeds for the crust, and maybe some almond extract (which I love). Now, canned pumpkin has 19.82g carbs/cup and 7.10g fiber for 12.72g net carbs. I like a piece of pie thicker than a half inch, and I like a Thanksgiving meal of more than just pie, so we're going to cut the pumpkin carbs by mixing with either "mashed potato" cauliflower (2.8g net carbs/cup), peeled/seeded zucchini (2.75g net carbs/cup), or peeled/seeded yellow summer squash (2.59g net carbs/cup). Might have to sneak in some turmeric powder if the color gets too light, but the strength of the pie spices will cover that turmeric taste right up. Now, more math. 1 can of pumpkin is just under 4 cups, or 50.88g net carbs. So maybe 2 cups of pumpkin with 25.44g of net carbs and 2 cups of summer squash with 5.18g net carbs gives us 30.62g net carbs for the filling. Divide that into 8 healthy-size pieces gives us 3.8275g net carbs for the filling in one slice. It's all squash, right? Or go with 6 generous portions per pie for 5.1g net carbs for the filling in one slice. Making that simple substitution, I can eat twice as much pie for the same low carbs. Hmmm... Maybe one cup of pumpkin and 3 cups of squash for 20.49g net carbs sliced into 8 at 2.56g net carbs each. We came upon this idea when we found the recipe for no-apple keto apple pie here on YT. Delicious. Surprising to me, pumpkin has more carbs than apples.

Looks good. I believe all imitation vanilla has corn syrup in it. So it can knock you out of ketosis. I will make this next week with extract. I have found that chilled butter mixed with the dry ingredients with a fork will lead to a really flakey crust. I'm looking forward to this! Thanks!

Allulose doesn't effect blood sugar so its not too crucial to know what an exact serving size is. Just cut it into 8 pieces like a regular pie probably would work.
Hi, I made this pumpkin pie crust. My sons really like it but parts of the crust kind of stuck to the pyrex pie plate. I made it just like you did in the video. Do you think I should grease the pie plate and make the crust in a different bowl? Maybe coconut oil? I did put the pie in the fridge for hours after cooling it on the counter shortly. I just don't want the crust to stick to the pie plate. This recipe is good because my family is not keto and they really liked it. Thank you!
Questions re: recipe: 1. Recipe says 3 drops liquid stevia. In video you said "3 droppers of stevia". Which is right? 2. I'm recipe it says to cover bottom and sides of pan with foil. In the video you covered the top and the edges with foil. Which is right?
Can you sub the allulose? It seems very expensive. And 1 tbsp has 10 gms carbs and 10 gms sugar? It doesn't say sugar alcohols, so it can't be subtracted from total carbs? Just asking.
We tried your recipe, with our oven set at 350 degrees it took almost an hour for the pumpkin to completely cook but crust ended up slightly burnt on the bottom portion of crust. My question, to avoid burning pie crust, if I turn down temperature to 325 degrees will this allow for pumpkin to cook without burning crust?
Is the cooking time 30 - 35 minutes (in video) or is it 30 - 45 minutes (in the description below video)? My oven is a regular one (not convection), so the knife did not come out clean so back it goes for up to 10 more minutes. I am looking forward to trying this out tomorrow. Suggest you increase ingredients so the crust can be formed along the top like regular crusts

I found that nut crusts burn if you try to put an edge on the pie so it's better to go low on the crust. Thanks for this recipe!

You could try, but my guess is the filling would probably burn against the pie pan without the crust to insulate it.

Allulose does not impact your blood sugar and you do subtract from total carbs.
