i followed the steps with an extra preliminary step of browning the beef in the pressure cooker set to sauté mode and it came out delicious, even without the mirin. the key ingredient is the short rib, which have a lot of marbled fat to absorb the flavor and become super tender. the soup tastes closer to chinese braised beef noodle soup, which is notoriously hard to make without a pressure cooker

Here a tip about shelling eggs really easy, at hight boiling Empty out the water put the eggs in cold water for 15 sec and crack the egg in a straight line until you reach the starting point where you started.

Can you elaborate on cracking an egg in a straight line. How would I do that?

I had the best pot roast ramen in royal oak Michigan and I forget the name of the place it was so good

Make tare separately. Don't just add miso to broth. Also, if you're going to spend this much effort making ramen, you might as well go all in.

Instant Pot...uses multiple pots, bowls and other stuff. Why even bother with instant pot at that point honestly? This most likely tastes great, but I can't see how it's worth the time investment.

7 minutes is for hard-boiled eggs, not soft-boiled ones 😬🥴

Maybe if you’ve got small eggs. Takes 10-11 minutes to hard boil a large egg.
