Aal - Suppe does not mean "soup made of eel or with eel" but a soup made of all available things Aalsuppe = alles drin ... Plattdeutsch ! In general it is sweet and sour and there should be a lot of dried fruit in it. Basis for this soup is a ham bone.
Total trocken das Ding. Am Hafen bekommst nur n Spritzer Remoulade. Echt lächerlich das als bestes fischbrötchen zu bezeichnen. Da gibt es so viel bessere Läden wo es noch mit liebe gemacht wird und nicht wir am Hafen am Fließband. Hab mir da mal für stolze 7 Euro ein krabbenbrötchen geholt und wurde blöd angeschaut als ich mehr Remoulade wollte. Nie wieder

When someone buys a shrimp roll for 10 € in Hamburg you know that it's a tourist..😂 For really good Hamburg cuisine I recommend the Restaurant "Hobenköök" (harbour kitchen): all local ingredients, great dishes, local craft beers.
The price of Krabbenbrötchen usually depends on the catch. The less shrimps the fishermen catch, the more expensive they are. And they are more expensive in tourist hotspots, of course. They usually cost around 6 Euros in the smaller harbours like Büsum or Husum.

In der Aalsupoe sind Backpflaumen (Trockenpflaumen)= prunes. Die original Aalsuppe musste keinen Aal enthalten. Es bedeutet aalns in (Schreibweise kenne ich leider nicht), alles drin. Es war eine Restesuppe. Ich liebe auch Franzbrötchen (ohne Gedöns) und Matjesbrötchen. Der Fisch ist meistens sehr gut. Leider lassen manchmal die Brötchen zu wünschen übrig. Scholle Finkenwerder Art kann ich auch empfehlen. Ich liebe auch euer Christmas Market Video.

Matjes are cured raw herring. The best way to eat herring in the world. And certainly not brought into Hamburg fresh every day. But Hamburg has a good fish market and they also have the Sunday Fischmarkt, which is not running due to Covid, but offers everything from fisch to clothes Sunday from 5:00 am onwards

I am a native Hamburg girl, I loooove Franzbroetchen!! Just because you're close to water, does not mean the fish is local! Krabben are usually flown to North Africa or the Eastern states for "puhlen", de-shelling, treated with sth unhealthy so they stay "fresh" and flown to the distributors. The "fresh" shrimps are finally sold to the end consumer about 4 days after catching. My teacher at catering college described aal suppe like this: Open the fridge, look at the leftovers Dat kommt aal in - platt fuer das kommt alles rein/ all the stuff goes in the soup. My family makes "Grosser Hans" which is a boiled bread pudding, and we eat a hot cherry sauce with it. Mmmmmhhhhh! My grandma used to do a soup with prunes in it, but I do not think it was Aalsuppe, definitely no fish in it, as i did not eat fish as a child.

You can buy unpeeled shrimp in some harbor areas along the coasts, usually much cheaper than the peeled ones. Peeling them, however, takes some practice ;-)

What you had is _not_ a (typical) Franzbrötchen. They are round like a snail. Akin to a cinnamon roll but flat. Go to the Hauptbahnhof and get it there on the Südsteg. Also try the ones with apple.
labskaus has got to be the most underrated foods in hamburg,nowadays , alongside grünkohl...both are not the most pleasing dishes to the eye but once it makes contact with your taste senses..things make sense. a flavour bouquet to please your taste buds..and especially wholesome when its cold out side.

Das ist im Norden ein Klassiker: müffelt zwar ziemlich streng, schmeckt aber hervorragend und ist sehr zu empfehlen, so richtig "zum reinhauen". Es sollte aber auch tatsächlich Bregenwurst sein, nicht nur Mettenden oder Kasseler... Gruß aus der Südheide und: "munterbleiben" :-)
I'm actually learning how to pronounce German words just by watching your videos! Love your food tours. The Matjesbrotchen looked good because I love a fresh fish sandwich but I also love shrimp so the Nordseekrabbenbrotchen looked delicious as well. The Labskaus reminded me a little of corned beef hash which traditionally ,here in the States, is also served with a fried egg on top but the Labskaus looked much tastier.
North Sea Shrimp are really nice. They have a far meatier and nuttier flavor than the shrimp you might be used to. Unfortunately, the amount that can be fished is quite limited and demand keeps growing, so they get more expensive every year.
If you currently want to buy Büsumer Krabben in the Supermarket, they cost more than 4 Euro for only 100 gramm. And this looks like more then only 100 gramm and is fresh...add that you are in a touristy area, and the price is no surprise.

Rolmops is a bit pickled herring. Maatjes (Germans call it matjes.. but nahhh nicht richtig :-p ) A "maatje" is the bucket the herring is cured in. So it is herring from the bucket :-)
Best Fischbrötchen you can get is on the Fischmarkt on Sundays from between 4.00 A.M. and 7 A.M. Yeah, that early. By 7 A.M. the fresh food is almost out of stock. For more sit-down restaurants and fish, go to the Portugiesenviertel, the Portugese Quarter. You will find a lot of Portugese / hispanic based restaurants there offering the freshest fish in Hamburg. But not only fish, but meat as well, for those no-fish-please-people.
I was just in Hamburg, and wish I would have tried the Fischbrotchen while I was there! I did however become a big fan of Franzbroetchen! Have you gone to Bremen yet? Might be a good trip, and nearby Bremerhaven was also interesting (museums, food, etc). Thanks for sharing, as always.
next time you're in Hamburg try the Fischbrotchen at the Firschmarkt, either Fischbeisl or Fabios Fisch. Less expensive and not a tourist trap ;) And if you wanna check out "urige" restaurants/diners definitely go Veddeler Fischgaststätte (closed atm, unfortunately) or Erikas Eck, it won't get any more Hamburg than that. Generally the whole city is plastered with good restaurants at decent prices, if you're not necessarily looking into traditional German food.
Two interesting semi-seasonal dishes are: German Gruenkohl (usually Fall/Winter); and pfifferlinge (a small oragneish mushroom) earlier in the year (late summer). The latter have been somewhat restricted because of the Chernobyl fallout; but last time I was living there you could still get them. Very tasty little fungi! Gruenkohl done right is amazing, but a little work-intensive.
Good idea to do a vid in northern Germany,that way people can see that Germany is not made of Bavaria only ;) Have a look at the smaller Cities ,too ! Visit Flensburg, Büsum, and the whole west-coast ;)
If you ever come back, try the Franzbrötchen from Franz & Friends (they have a branch at the Hbf). They have different flavors/variants, like a toffee/caramel one, chocolate chip, banana, nuts, and even a milchreis one.
When around Bremen, order Knipp (with fried potatos and pickles). But only if it is cold outside, this is not necessarily the best dish during hot summer days...

After explaining the Labskaus, it sounds pretty tasty. Didn't look appetizing at first. But if it's mixed with potatoes and onions, I might try it one day. Never had beet root juice before. I've tried beets and I find them to have a very earthy taste. I don't like it, but I don't hate it either. My favorite thing you guys ordered was the shrimp brötchen. That looked very tasty.

So nice to see your food experiences in Hamburg. We went to a fish restaurant that was just off the Elbe River. I really like Scholle (not sure if that is spelled right). I believe it may be called European plaice in English. Very nice not fishy tasting. When we had Labskau at home growing up here in Canada, we made mashed potatoes and then mashed in Corned Beef and finely diced pickles. Our version was more potato with some Corned Beef rather than a lot of beef like was shown in your video. It is a very hearty meal.
I think I know what the Labskaus reminds you off. Corned beef hash. Every time I eat it it's reminiscent of that, which makes sense given its ingredients. But especially with the fried egg, you get that corned beef hash breakfast feel. 😊
I think with Fischbroetchen it's an aquired taste and you have to eat it more often to start to appreciate it and start noticing the awesomeness of it. Same as with things like sushi or peanut butter. Eat it more often :-)
Ironically it's cheaper to fly them to Morocca and back than have them peeled in Germany by a machine. The freshest and cheapest option is to buy unpeeled shrimps and peel them yourself.
Corned Beef Hash? My great grandfather said sailors ate this often because the corned beef is what lasted onboard long trips at sea. Plus they would use any meat leftovers ground into the hash so they did not waste anything.
Also eigendlich wird labskaus auf keinen fall mit corned beef aus der dose gemacht, sondern mit gepökelter rinderbrust...schmeckt dann auch noch besser😄

Unfortunately today, farmers in India, and particularly those from the States of Punjab and Haryana who are predominantly Sikhs and Punjabis, need your kind attention and support.Their self-esteem, pride and existence is at stake. Sikhs are generous, helpful, openhearted and very friendly. They do not discriminate on the basis of religion, culture, caste, colour and gender. Unfortunately, the Government of India is imposing laws which can take away bread from the mouths of these poor farmers. Not only these farmers, but also daily wagers, unskilled and skilled labourers, shopkeepers, small traders and many other professions associated with agriculture, have outright rejected this black law and are protesting on the streets of Punjab for their rights. They are making a strenuous effort, using all their resources, to repeal these regressive laws passed in the Indian Parliament. If our farmers remain unhappy and discontented, how can we feel satiated with these palatable street food? I thank you for allowing me to convey and relay the genuine cause of farmers in India from this platform.
And I have just these days heard on the radio news, that - due to the corona virus northsea shrimps are no longer sent to Northern Africa to get peeled, and having them peeled here (probably to minimum wage condktions) makes them more expensive. But then, this makes me really wonder...
Nordseekrabben are excellent but a pita to peel. My cousin from NIebüll brought us (we lived in France) 10l buckets of them when he went for visit; We the children had to peel them for hours (or so it felt), but man, what a reward after that to eat them.
It used to be a poor mans food, but has become increasingly expensive over the last years, as they are a limited ressource that has become quite fancy.
The "Nordseekrabben" are so expensive because they are so small and can only be pulled by hand. even if u buy "Nordseekrabben-Salat" at the supermarket u have to pay nearly 6€ for 100g. Even me as a fish-hater, love "Nordseekrabben". In Hamburch sagt man Tschüß ;)

If you prefer it, they also have a Spare Ribs all-you-can- eat day (every Thursday), but I did not try it yet. By the way: The Fischbrötchen on Landunsgbrücken of course are the most expensive ones in Hamburg ("Touristen-Meile"). I would walk some metres to Fischmarkt, I guess they are a bit more inexpensive there. Or take the "Hadag-Ferry 62" from Landungsbrücken to Neumühlen-Övelgönne (Museumshafen). It is beautiful on the beach (attention: in the summer it is overcrowded around the clock!) and there are also some good fish-restaurants.
The only time most older, male swedes ever ate that was in the army and in swedish it's called "Lappskojs" and we got it in as army MRE in a can. And it wasn't the most liked can to get to eat starving in the middle of nowhere :)

Aber sicher dass das kein Deutscher sein kann, war ich mir schon nach der Folge über deutsche Biere - angefangen beim randvoll mit Eiswürfeln gefüllten Humpen über zahllose andere Kracher bis zum Erklären der Plörre aus 50% Wasser und dem (nennen wir es liebevoll) Gemisch aller probierten Biere zum besten(!) Bier...

The price of Krabbenbrötchen usually depends on the catch. The less shrimps the fishermen catch, the more expensive they are. And they are more expensive in tourist hotspots, of course. They usually cost around 6 Euros in the smaller harbours like Büsum or Husum.

In der Aalsupoe sind Backpflaumen (Trockenpflaumen)= prunes. Die original Aalsuppe musste keinen Aal enthalten. Es bedeutet aalns in (Schreibweise kenne ich leider nicht), alles drin. Es war eine Restesuppe.
Ich liebe auch Franzbrötchen (ohne Gedöns) und Matjesbrötchen. Der Fisch ist meistens sehr gut. Leider lassen manchmal die Brötchen zu wünschen übrig. Scholle Finkenwerder Art kann ich auch empfehlen. Ich liebe auch euer Christmas Market Video.

Matjes are cured raw herring. The best way to eat herring in the world. And certainly not brought into Hamburg fresh every day. But Hamburg has a good fish market and they also have the Sunday Fischmarkt, which is not running due to Covid, but offers everything from fisch to clothes Sunday from 5:00 am onwards

Just because you're close to water, does not mean the fish is local! Krabben are usually flown to North Africa or the Eastern states for "puhlen", de-shelling, treated with sth unhealthy so they stay "fresh" and flown to the distributors. The "fresh" shrimps are finally sold to the end consumer about 4 days after catching.

My family makes "Grosser Hans" which is a boiled bread pudding, and we eat a hot cherry sauce with it. Mmmmmhhhhh! My grandma used to do a soup with prunes in it, but I do not think it was Aalsuppe, definitely no fish in it, as i did not eat fish as a child.

The northsea shrimps are peeled by hand. They got driven per cooling truck to morocco, got peeled and then back to Germany, that's why they are so expensive.
Helgoland is the only offshore island of Germany.
You can buy unpeeled shrimp in some harbor areas along the coasts, usually much cheaper than the peeled ones. Peeling them, however, takes some practice ;-)

The lobscouse is a kind of corned beef hash with egg the fish on the side is a European variety it's also made in New England , it's usually got a pickle or a relish / chutney as a side different versions are made all over the world with different sides .

The fish market on Sunday is a great time. Hamburg is the only place where we found Raw beef and onion at the market. It's a big thing here in Wisconsin. Sometimes called Hecke Peter. We loved Hamburg.

What you had is _not_ a (typical) Franzbrötchen. They are round like a snail. Akin to a cinnamon roll but flat. Go to the Hauptbahnhof and get it there on the Südsteg. Also try the ones with apple.

labskaus has got to be the most underrated foods in hamburg,nowadays , alongside grünkohl...both are not the most pleasing dishes to the eye but once it makes contact with your taste senses..things make sense. a flavour bouquet to please your taste buds..and especially wholesome when its cold out side.
Not a fan of Aalsuppe, but Labskaus is one of my comfort foods!

Das ist im Norden ein Klassiker: müffelt zwar ziemlich streng, schmeckt aber hervorragend und ist sehr zu empfehlen, so richtig "zum reinhauen". Es sollte aber auch tatsächlich Bregenwurst sein, nicht nur Mettenden oder Kasseler...

I'm actually learning how to pronounce German words just by watching your videos! Love your food tours. The Matjesbrotchen looked good because I love a fresh fish sandwich but I also love shrimp so the Nordseekrabbenbrotchen looked delicious as well. The Labskaus reminded me a little of corned beef hash which traditionally ,here in the States, is also served with a fried egg on top but the Labskaus looked much tastier.
North Sea Shrimp are really nice. They have a far meatier and nuttier flavor than the shrimp you might be used to. Unfortunately, the amount that can be fished is quite limited and demand keeps growing, so they get more expensive every year.
German unique food? YES!!! The more regional and unique the better!
If you currently want to buy Büsumer Krabben in the Supermarket, they cost more than 4 Euro for only 100 gramm. And this looks like more then only 100 gramm and is fresh...add that you are in a touristy area, and the price is no surprise.

Rolmops is a bit pickled herring. Maatjes (Germans call it matjes.. but nahhh nicht richtig :-p ) A "maatje" is the bucket the herring is cured in. So it is herring from the bucket :-)
Best Fischbrötchen you can get is on the Fischmarkt on Sundays from between 4.00 A.M. and 7 A.M.

For more sit-down restaurants and fish, go to the Portugiesenviertel, the Portugese Quarter. You will find a lot of Portugese / hispanic based restaurants there offering the freshest fish in Hamburg. But not only fish, but meat as well, for those no-fish-please-people.
It did look like corn-beef hash which goes great with a fried egg. Phil's facial expressions when tasting the food were priceless !
I was just in Hamburg, and wish I would have tried the Fischbrotchen while I was there! I did however become a big fan of Franzbroetchen! Have you gone to Bremen yet? Might be a good trip, and nearby Bremerhaven was also interesting (museums, food, etc). Thanks for sharing, as always.
But in Bremen you have to try "Grünkohl mit Pinkel", "Rollo", "Schnoorkuller", "Klaben" or "Babbeler". :D

next time you're in Hamburg try the Fischbrotchen at the Firschmarkt, either Fischbeisl or Fabios Fisch. Less expensive and not a tourist trap ;) And if you wanna check out "urige" restaurants/diners definitely go Veddeler Fischgaststätte (closed atm, unfortunately) or Erikas Eck, it won't get any more Hamburg than that. Generally the whole city is plastered with good restaurants at decent prices, if you're not necessarily looking into traditional German food.
Two interesting semi-seasonal dishes are: German Gruenkohl (usually Fall/Winter); and pfifferlinge (a small oragneish mushroom) earlier in the year (late summer). The latter have been somewhat restricted because of the Chernobyl fallout; but last time I was living there you could still get them. Very tasty little fungi! Gruenkohl done right is amazing, but a little work-intensive.
one of the best things about Germany are all the bakerys with fresh pastries everywhere.
Good idea to do a vid in northern Germany,that way people can see that Germany is not made of Bavaria only ;) Have a look at the smaller Cities ,too ! Visit Flensburg, Büsum, and the whole west-coast ;)
If you ever come back, try the Franzbrötchen from Franz & Friends (they have a branch at the Hbf). They have different flavors/variants, like a toffee/caramel one, chocolate chip, banana, nuts, and even a milchreis one.

When around Bremen, order Knipp (with fried potatos and pickles). But only if it is cold outside, this is not necessarily the best dish during hot summer days...

After explaining the Labskaus, it sounds pretty tasty. Didn't look appetizing at first. But if it's mixed with potatoes and onions, I might try it one day. Never had beet root juice before. I've tried beets and I find them to have a very earthy taste. I don't like it, but I don't hate it either.
My favorite thing you guys ordered was the shrimp brötchen. That looked very tasty.
Corned beef hash with a sunny side up egg is very popular in America. I never thought to serve it with fish, though. The fish in Hamburg looks amazing!

So nice to see your food experiences in Hamburg. We went to a fish restaurant that was just off the Elbe River. I really like Scholle (not sure if that is spelled right). I believe it may be called European plaice in English. Very nice not fishy tasting. When we had Labskau at home growing up here in Canada, we made mashed potatoes and then mashed in Corned Beef and finely diced pickles. Our version was more potato with some Corned Beef rather than a lot of beef like was shown in your video. It is a very hearty meal.
That last dish is like a minced corned beef and hash dish. Sounds good.

I think I know what the Labskaus reminds you off. Corned beef hash. Every time I eat it it's reminiscent of that, which makes sense given its ingredients. But especially with the fried egg, you get that corned beef hash breakfast feel. 😊

I think with Fischbroetchen it's an aquired taste and you have to eat it more often to start to appreciate it and start noticing the awesomeness of it. Same as with things like sushi or peanut butter. Eat it more often :-)
The shrimps are very hard to catch and to edit. Very small shrimps. Thats why the price is so high. But these are the most tasty shrimps in the world.
Those shrimps are pealed with hand, that's why it's expensive and I think they do it in Morocco.
Ironically it's cheaper to fly them to Morocca and back than have them peeled in Germany by a machine. The freshest and cheapest option is to buy unpeeled shrimps and peel them yourself.
Just found this video (and now i want a Matjesbrötchen) - Prune is the Trockenpflaume, plum is the fresh one.

Corned Beef Hash? My great grandfather said sailors ate this often because the corned beef is what lasted onboard long trips at sea. Plus they would use any meat leftovers ground into the hash so they did not waste anything.

Your coverage of German food in Hamburg is enjoyable and entertaining. We know that the ingredients that go into these dishes are generally produced by farmers. Unfortunately today, farmers in India, and particularly those from the States of Punjab and Haryana who are predominantly Sikhs and Punjabis, need your kind attention and support.Their self-esteem, pride and existence is at stake. Sikhs are generous, helpful, openhearted and very friendly. They do not discriminate on the basis of religion, culture, caste, colour and gender. Unfortunately, the Government of India is imposing laws which can take away bread from the mouths of these poor farmers. Not only these farmers, but also daily wagers, unskilled and skilled labourers, shopkeepers, small traders and many other professions associated with agriculture, have outright rejected this black law and are protesting on the streets of Punjab for their rights. They are making a strenuous effort, using all their resources, to repeal these regressive laws passed in the Indian Parliament. If our farmers remain unhappy and discontented, how can we feel satiated with these palatable street food?
I thank you for allowing me to convey and relay the genuine cause of farmers in India from this platform.
I think the shrimpbun is so expensive because of the „Nordseekrabben“ even at Edeka or Aldi 100 grams of them cost around 5€
And I have just these days heard on the radio news, that - due to the corona virus northsea shrimps are no longer sent to Northern Africa to get peeled, and having them peeled here (probably to minimum wage condktions) makes them more expensive. But then, this makes me really wonder...
Nordseekrabben are excellent but a pita to peel. My cousin from NIebüll brought us (we lived in France) 10l buckets of them when he went for visit; We the children had to peel them for hours (or so it felt), but man, what a reward after that to eat them.
Mit Krabben hat man unglaublich viel Arbeit!! Ich will sie nicht säubern müssen! Ausserdem gibt es nicht mehr viele!
It used to be a poor mans food, but has become increasingly expensive over the last years, as they are a limited ressource that has become quite fancy.
The "Nordseekrabben" are so expensive because they are so small and can only be pulled by hand. even if u buy "Nordseekrabben-Salat" at the supermarket u have to pay nearly 6€ for 100g.

By the way: The Fischbrötchen on Landunsgbrücken of course are the most expensive ones in Hamburg ("Touristen-Meile"). I would walk some metres to Fischmarkt, I guess they are a bit more inexpensive there. Or take the "Hadag-Ferry 62" from Landungsbrücken to Neumühlen-Övelgönne (Museumshafen). It is beautiful on the beach (attention: in the summer it is overcrowded around the clock!) and there are also some good fish-restaurants.
The only time most older, male swedes ever ate that was in the army and in swedish it's called "Lappskojs" and we got it in as army MRE in a can. And it wasn't the most liked can to get to eat starving in the middle of nowhere :)

Phil nehme ich schon lange nicht ab, dass er Deutscher ist. In dieser Folge z.B. nach dem ersten Happen Labskaus, an was ihn das erinnert: "Schwwoartenwörst" oder so ähnlich - ich kenne kein deutsches Wort, das ein Deutscher so oder so ähnlich aussprechen würde. Aber sicher dass das kein Deutscher sein kann, war ich mir schon nach der Folge über deutsche Biere - angefangen beim randvoll mit Eiswürfeln gefüllten Humpen über zahllose andere Kracher bis zum Erklären der Plörre aus 50% Wasser und dem (nennen wir es liebevoll) Gemisch aller probierten Biere zum besten(!) Bier...
Ich liebe Labskaus. Das koche ich immer wieder mal. In Restaurants bin ich vorsichtig, doch selbst gemacht auf jeden Fall genial.
