I've had good luck faking wok hei with a drop of Liquid Smoke on the side of the wok just after I kill the heat. Give it a good stir. I think it actually ends up scenting the rice, not actually flavoring it. I do that with most of my wok cooking. Seems to be ok.
So hard for home cook to get real wok hei. Gas stove especially with that burner adapter creates hot high flame best scenario is outside on propane burner set up can create true restaurant quality. Especially when you can order every authentic condiment and ingredient
Reminds me of Nee Hao house fried rice in Houston. So good! Mama, if you haven't been to Nee Hao, look it up. It's in an area that might seem a little sketchy, but it's fine and the food is cheap and amazing! Ate there for at least 15 years before I retired and left Houston.
Hello! I would almost bet that you could go ahead and add veggies to this recipe. Broccoli, snow peas, and maybe a little julienne sliced sweet red pepper, or even chiles diced up and cooked separately. Spoon it all into a bowl until you are ready to add it when you add the meat. At least that's the way that I would do it because I enjoy veggies in my fried rice as well. Keep on cooking, my friend! 👍

When preparing meat, the Chinese always add corn or tapioca starch to tenderize the meat (except seafood). It actually gives that toothsome feel you fin in restaurant Chinese food.

I love stir fry and fried rice. I don't have a wok. I have a very well seasoned 14" cast iron skillet. It works great for this type of recipe but, you have to get it hot and keep it hot to get the desired results. thanks for sharing your cooking skills with us. You are making me a better cook.

For anyone trying to get some wok hei, Kenji Lopez-Alt has a tip to use a blow torch on the rice (or noodles). It lightly chars it, which is essentially what wok hei is. He has a lot of fried rice videos on his channel.

Looks delish! I am one who wants to know about woks, but my question has to do with non-stick coatings. I've ruined two pans with the high temperatures needed for stir fry. The only woks I've run across have had a non-stick finish, so I haven't bought them. I think I am probably looking for a carbon steel one that I can season like I would a cast iron pan. I think your tip about the Korean market was a good one and is the way I need to go. Thanks!

Any kind of rice can be use. Your rice must be day old and make sure it’s dried out. Don’t add too much liquid. She use WAY TOO much liquid and TOO MUCH sesame oil.

In my experience, the worst mistake you can make with cooking fried rice is mixing in the eggs before they are firmly cooked.

u could use basmati rice, they have separate already due to low of sugar
