You can use custom chip in WOKWI to implement SSD1351, but I don´t believe anyone else has done this yet. At least I haven´t found a working example. I don´t have enough knowledge to do it myself unfortunately. There are some examples in documentation, this might be a good start.

Can you make a video on how to create a rolling animation menu? With a rolling animation that goes to the next menu entry when u press a button. Or rolling number animations would also be cool 😊

You should be able to get the initialization sequence from the u8g2 library source code.
Can you create a scrolling text using a text file. With control to control scrolling speed.
