    I got pitboss 3series electric smoker 30inch with wood chips I never had one before I try smoke baby back ribs on it first time my temperature is lower and higher and medium what best temperature I need to have on my pitboss 3series electric smoker 30inch with wood chips my baby back ribs wasn't done and was too dry

    So good idea for one of those tin foil hot water heater wraps fo help keep the wind and cool away. Just got the smoker setup tomorrow I will season it

      @Pioneer Smoke Houses Channel my first smoker was a big chef and in cooler weather just above freezing it would allow me to keep smoking.

      I never use water pans. I have tried it in the past and I think the steam makes a mess inside and outside the smoker. I will error on a lower temperatures and I fill the pan in the WSM with lava rock.

      I am not a fan of water in my smokers. Most of the time I use the waterpan to collect extra grease , defuse heat and smoke, or add lava rocks to increase thermal mass.     I did chicken breasts salt pepper garlic powder paprika in this smoker at 275 for 50 mins got to 165 temp took off, had pecan chunks in there in 10’ p an with full water pan it was ok but very smokey not alot of taste, any ideas?

      chicken breast is always a tough one. I have changed to smoking my chicken at 325. I pull it at 155 wrap it and rest for 30 minutes, like a brisket or roast. I use smoked seasoning , like smoked paprika and smoked salt, to add a bit of smoke to it. I avoid water but that is a personal choice that gets people who will fight over that one, lol...

      I sell as many smokers as I can after 6 to 10 videos.I sold the 230s to my sister, so I might buy them back and make a few more videos. I have a pork blade roast video and would do it similarly. In the video I recorded a few days ago, I lightly coated the pork butt with garlic, then my 3211 mix, and that was all.       glad it worked out for you... I played with the temp until I got what I wanted. For me I have always had better results going under temperature and slowly creeping up.

    I don't know how you got it to 200 lol. I have the home Depot one (same but different name) and before I bought a 10 psi regulator with needle valve lowest mine would get was 250/260.
    I also was able to add seals after that mod. Seals with stock regulator would have been even hotter at minimum. Lol.
    I also added some silicone grommets to the sides for my temp probes.
    Instill have a small gap on top left because of the seals on hinge side putting pressure on the hinges I think. But that will seal with carbon over time.

      I went and double-checked that temperature on my other videos and this smoker was able to run under 200. Propane and electric analog smokers can vary widely. I wish I had an idea for you to try but it sounds like you have tried everything I would. Here is another video with the temperature under 200.       @@pioneersmokehouseschannel have you checked the thermometer in boiling water? My thermometer was almost 60deg off. So it would have said 190-200 but really be at 250-260
