UPDATE: 10/21 So i was a little skeptical, but it made sense, as Salmon is frozen. first of all, the one shown on this video has been discontinued, the new one isn't from Norway, but from Chile, but it is still farmed, so thats a plus. I picked up the frozen Salmon from my local Costco, the date packed was 7/31 about 2 months ago, which is good! It means it has been frozen already for at least 2 weeks. I took it home, opened the bag, got one 7oz piece, and removed it from the plastic packaging, rolled it on a paper towel, place it on a plate and waiter for it to thaw in the fridge. Left it overnight, by lunch time it was ready, what i did next helped. You want to rinse it with water, place it on a small container, cover both sides with salt (this is a way to cure it and give it better flavor.) add enough water to cover the piece and some ice to keep it cooler. Wait 40 minutes and rinse off all the salt, and dry it with a paper towel, and it is ready to eat! Its been over 24 hours and i can confirm i did not get sick, eating this frozen salmon. In reality the quality was very similar to the one in a sushi restaurant, and i am not exaggerating. Give it a go yourself! Enjoy!

The liquid inside the plastic drains out and gets absorbed into the paper towel as the salmon slowly defrosts inside the fridge. This removes as much of the water that's defrosted so that the defrosted salmon isn't soggy when i take it out of the fridge.
We love to get costco salmon sushi my grandpa make it for us for a least 2 time a week if my grandma doesnt make us dinner or any sushi wish i get into keto diet too
FDA Food code 3-402.11 Section B (3) 2009 states that Salmon that is farm-raised or aquacultured can be eaten raw without freezing since the salmon is fed with parasite-free fish pellets. Wild salmon should never be eaten raw unless it has been frozen to - 35F degrees for 24 hours because it may contain parasites from the prey fish it eats.
For peace of mind, I always freeze fresh salmon for two weeks before I use it for sashimi. For costco frozen salmon pack, that timeframe can be reduced somewhat.

farmed raised atlantic salmon from costco is actually frozen by them after harvesting. and virutally no parasites are in farm raised. you dont need to freeze it at home again and could just eat it straight out of the package if u wanted to but if u prefer u can take the extra step. id wash it under cool water before because you dont know how it was handled after being cut, better safe then sorry.
It really depends, if I want to thaw it property, I leave it in refrigerator overnight and next day just take it out and cut and eat while still chilled. If I'm in a rush, I just take frozen piece out into a bowl of cold water, it thaws really quickly but the taste and texture is not as good as thawed overnight in fridge.

I eat a lot of sushi … if it’s fresh wasabi and some fancy nigiri or high level sashimi, I maybe do what you suggest and keep the wasabi and soy separate. I will use the chopsticks to get a bit of wasabi and spread it on half the fish. Then use a piece of ginger to dip into the soy sauce and wipe the sauce onto the fish w the ginger. This keeps the soy fish uncontaminated. Usually , I just mix the green paste wasabi into the soy dish though.
Isn’t it dangerous to thaw fish in a refrigerator while still having the fish inside the package??? I’m pretty sure it causes a very dangerous to toxin. Some bags say to remove the fish from package before thawing.
If you are into salmon sashimi, I recommend you to watch Hiroyuki Terada's channel. You can also search for "cure salmon for sushi, sashimi" videos on RUclips. I would rather follow an authentic Japanese sushi chef. But the normal practice is to freeze salmon for a week. Then thaw the portion you want to eat, then cure it. It is not like he has shown here, eaten straight after thawing and cleaning.

Alternatively, if you can find a Japanese supermarket, some of them do sell sushi/sashimi-grade fish fillet, i.e. already cured. All you need to do is to cut it. But they are more expensive of course.
Everyone has worms. Parasites are not a big problem if your immune system is strong. However, just be cautious. Great tips! I might try this out soon, because I am pregnant and craving salmon sashimi everyday. 😍🍣🎏🎣🐟
It is advised that pregnant woman to avoid having sashimi/raw foods because of weakened immune system and to avoid complications. I'm not health expert but I think it's better you wait till baby is out to try raw fish :)

They actually do. They call it wasabijoyu and I've seen them do it countless times. Maybe not in an expensive restaurant with actual wasabi, but at a kaiten or at home...all the time.
PARASITE-wise.... yt sushi chefs adamantly recommend farmed over wild for RAW sushi. of course best _cooked_ is wild sockeye or king salmon. For home sushi, you NEED farmed to avoid the parasites!
Farmed is absolutely safer by a huge margin. There have been multiple studies done that have proven this definitively. In one study of dozens of different farms only 1 in 4,000 fish tested was found to have parasites while in wild fish as high as 65% of those tested did. Freezing at the appropriate temperatures and for the appropriate length can technically still make them both safe to eat but the fact remains that farmed are much less parasite prone.
Actually never eat any wild salmon raw, the chance of parasites are higher in wild caught salmons, and if you didn’t freeze it long enough or low temp enough you’ll get parasite in ya belly

I’ve eaten their non-frozen atlantic salmon raw before. I find that it has a better texture and I haven’t gotten sick.

I personally never smell any hint if vinegar... But idk
Salts are used to bring out the flavor, but vinegar wash is to disinfect.

Costco Tuna is also quite good as sushi. However, sometimes there is that tough white membrane in the tuna. Be selective or cut around it.

Yes, always remove the fish from the package before thawing to prevent Clostridium botulinum from growing.
But you can use that size for rolled sushi
Also, can i not just thaw it out in hot water for quicker thawinv
You should never do hot water but cold water is okay! Thawing in the refrigerator is the safest
