I absolutely love Yakisoba it's so good. I always do mine in a wok.
Woks works great for 2 servings, I think. It's hard for me to toss when 3+ servings in a wok. In Japan, we often use a teppan or electric griddle to cook yakisoba for family.

I was taught to put an egg on top, with a sprinkle of seaweed, but either way it’s a quick and wonderful meal!
Fried egg is a nice addition and we have Omuyakisoba, which is Yakisoba stuffed omelette too!

I've been making this recipe of yours for a while and my family loves it. I did doctor it a bit for my family's tastes though. Ivuse bacon instead of pork belly and we don't include the mushrooms. All we can find are the frozen maruchan noodles at our local Asian market so unfortunately they really break apart, but they still taste delicious.
I have the same issue with that brand. If you can find Myojo, it’s better. The problem is we never freeze Yakisoba noodles in Japan… but to ship here or to keep it for a long time, they freeze the noodles. Horrible! This is why we have to cook the noodles separately. In Japan, we can just throw in noodles at the end and they nicely separate easily. No broken pieces. I should totally send complaints or ask for improvement. Broken pieces are like less than 1 inches. Ridiculous…. 😞 I believe everyone (here in the US especially) has same issues.
I only have access to Maruchan as well, and I've found that a very quick steam before stir frying helps a lot with the broken noodles. I place the noodles with a few teaspoons of near boiling water in a covered pot for 30 seconds before frying and the noodles separate much better without too much of a negative effect on texture.
Please do a video about okinawan minudaru (pork marinated in sweet black sesame paste)!!!! 🙏🏿

A wok would be okay to use?
Sure! It’s just that it’ll be a lot of food in the wok so you won’t be able to lift (or at least me)… typically Yakisoba is made on a griddle or what we call Teppan or an electric hot plate - a larger surface.
Cant wait to make this soon for me will use tofu or mushrooms instead as am a vegetarian i never had yakisoba before perfect for my after office meals
Yes, just omit the meat, and I’d use more vegetables or/and king oyster mushrooms or “meaty” mushrooms for the texture 🤗
What are you going to substitute for the Worcestershire sauce and the oyster sauce since both have animal products in them?

Looks amazing! Can I use bulldog tonkatsu sauce instead of Worcestershire? I never really buy Worcestershire sauce.
Thank you! Hmmm... tonkatsu sauce is a lot sweeter and thick, so it's not really used for seasoning yakisoba. Chuno sauce or Usuta-sauce (Japanese worcestershire sauce) is even a better substitute. Yakisoba has that slightly strong/sharp vinegary taste, and tonkatsu sauce is a bit too sweet for that... If that's the only one you can have, then I'd omit majority of ketchup and sugar and adjust from there.

Looks delicious. Sadly, I use the instant yakisoba noodle packages by Indomie and bagged coleslaw mix for my yakisoba, with bacon. Still tasty.
