As a grad student at WSU, WSU prides itself on its cheese and Cosmic Crisp apples. So many local businesses use this cheese in so many recipes.
Cosmic Crisp is SO GOOD
FOR REAL. I remember doing a report my freshman year of college about the development of the cosmic crisp apple and how cool it was. An then being ecstatic when I could actually purchase them in stores because they were everything I wanted and more!

I was with my GF at her grandparents' house once and was in their friedge trying to find a snack for my gf. I look and see this can of cougar gold amd ask if they would be okay woth us cracking it open. They said they had forgotten they had it (it was buried in the back bottom corner of the fridge) so told me to check. It was dated 1992. It was 2019 when we found it. We looked online and WSU's website said that they had an indefinite shelf life. We open the can and try a bit and ill be damned if it wasn't the single best cheese id ever tasted. Getting to eat a 27yr aged cheese was awesome. Ive been grabbing cans to keep in deep storage and age myself ever since

I've had cougar gold. It's better than 99.99% of the cheese you've had in your life. That stuff is so ludicrously good. The wetness dries out, and the cheese only gets better over time.

I grew up 6 miles from WSU... This is my favorite cheese! Ferdinand's (the student ran creamery where this is made) also has amazing ice cream!!
Edit:Also, it costs $40-60 a can depending on time of year/holiday demand lol, this stuff ain't cheap.
Roux based Mac and Cheese with like 25-30% cougar gold in the cheese mix along with more melty cheeses like mild cheddar is such a bangin meal.....

I love the Cheese but the ice cream might be the best I've ever had, just wish you could get it ANYWHERE but on campus.
This was the first “expensive” cheese I ever bought, I paid 40 bucks for a can back in the 2010’s or so. I bought it for the novelty thinking it would be gross, it ended up being the best cheddar I ever had. Still to this day it ranks among the top 5 for my personal favorite cheeses. Literally the best cheese sauce you’ll ever make.
My Grandpa used to buy this for us for Christmas every year and for a long time as a small child he had me convinced the freshmen at the college had to milk cougars to make it. I absolutely LOVE this cheese. RIP Grandpa.

Interesting. Beecher's frozen World's Best Mac and Cheese is awesome. I use it as a base for quick casseroles and stuff. I even made a killer seafood chowder out of it.

I’ve had Cougar Gold before but I’ve never had it wet like that, I think you’re supposed to just take it out of the can and then dry it and store it? My dad went to WSU so he always had some somewhere

Yoooo im from Wa state and Cougar Gold is freaking FIRE. I had no idea it was apocalypse cheese, its just really really good. We always open it and then drop out the whole brick of cheese onto paper towels, dab off the excess mousture, and then transfer it to a big ass ziploc bag.
It seriously makes the best mac and cheese you will ever have.

I feel like your description of the cheese is a great metaphor for Washington state as a whole
My parents are Jamaican and they also sell cheese in a can there. Nowadays, you mostly see it used around Easter to eat with an Easter bun (which is a type of bread that’s a mix between a fruitcake and a hot cross bun) to make bun and cheese, but you can sometimes get it in Walmart if your local one has a good international aisle. I’m interested to trying this type of canned cheese to see how much it differs in taste.
My roommate says a) He would LOVE to try this cheese. b) He's glad Josh isn't a scientist, because he would, quote, "go all Jurassic Park. Be so busy figuring out if he COULD, he wouldn't stop to wonder if he SHOULD." He's picturing other apocalyptic foods😅

They make ice cream too. The creamery is called Ferdinands, and they have a specialty cheese every year that is actually someone's thesis for their masters degree.
Their ice cream is the BEST IN THE WORLD! It's so rich it's hard to eat more than one scoop. You can get most. Ice cream flavors as ice cream sandwiches made with cookies, they are called "grabbers"

I worked with this at my last job at this bougie charcuterie place. I liked it a lot, but mostly because we'd open it and sell it in slices, which dries it out a little and improves the texture imo. I also thought that defeated the purpose but my manager didn't like that lmao

As a Washingtonian I recommend wrapping it in a cheese cloth for a day or two, then put it in a nice Tupperware container and you're good.

I'm used to, "wet cheese". Queso panela is packaged in brine. Great in salads, pico de gallo, ceviche ect.
as a washington native i have to say we love cougar gold. its so incredibly sharp and that crystalline structure he talks about briefly is crazy in this cheese. its the perfect cheese to pair with fruit. a cosmic crisp apple, for example.

Manmade cheese beyond our comprehension, my favourite
I’m a chef from Seattle Washington about 4 hours west of WSU where the cheese is produced. What you have is a very young can of cougar gold. As it ages it develops a very intense full bodied flavor that I love to use as a garnish for pasta dishes such as Mac N Cheese.
I’m from Jamaica, and have a tradition at Easter where we eat ‘bun & cheese’. Living here in the States we have a canned cheese made in Jamaica and it’s not wet, it’s moist and delicious😋🇯🇲
This cheese has been a staple Christmas gift in my family for years.
It was introduced as such from some extended in laws.
Every year we would wager when that can cracked, and anticipate an eager date.
But it wasn't about the cheese. Basically, it was a celebration together being tapped a little later that year. At least after New year.
I don't recall a can that really went past Easter. Majority rule always got opening.

We're proud of our Cougar Gold here. Amazing for any "cheese-melty" recipes and yeah, for a shelf-stable product this is a Gold standard.
As a current WSU student, I can attest that cougar gold is really good. The longer you age it in the fridge the sharper and more flavourful it becomes. Also it is only 30$ when bought at ferdinands creamery on campus.

And it's straight HEAVEN. Also it's made by students at WSU which provides them jobs in school as well as proceeds going towards scholarships and their science departments.
Cosmic crisp apples were a happy accidental discovery in our house when my husband popped into a store and just bought the first red colored apple he saw. It’s kind of the one food item we all completely agree on now though. They’re amazing.

Grew up near WSU. Cougar gold was sold in a lot of grocery stores near me, it was a thing my family would buy on special occasions since it was kinda expensive. That stuff if so good! Now it’s sold in small cans and I buy it for myself for girl dinner sometimes… glass of wine, crackers, cougar gold… I’m set

As a University of Washington grad it pains me to say many great things come out of Washington State University (go Dawgs). Cougar gold is one of those great things when used to make a baller Mac and Cheese. Epic!

Cougar Gold is pretty great haha, its perfect to break over some english muffins and bake until crispy. That, or paired with fresh green apples and pears with a tiny bit of fig jam
Aside from being a bit wet and greasy when it first comes out, it's tasty cheese! Like a complex cheddar that's been left out at room temp. Someone brought this to our annual Half-o-ween party as a "weird food" contribution
I think it's been about 10 years since we first discovered this cheese. It's the best cheese and I love cheese. The wet he is talking about is just a bit of moisture. It's not going to hurt anything. Last year I opened a can I've been holding for 5 years and it was perfect. Open the can, pull the cheese, eat what you want and put it in anything and put it in the fridge and eat it as you like. If you order some just find some space in your fridge for the cans and it'll last as long as you want. I have 3 decades of cheese tasting exp. And I absolutely love this brand of sharp cheese. It's a 10/10 for me
theres this canned cheddar cheese in a similar container me and my family (jamaican) use to make bun and cheese (fruit cake but denser) every easter. its delicious.

I got a year long subscription of monthly cougar cheese (all of their varieties), I'm so excited to eat them! I'm currently off dairy but have them all in my fridge (they have to be refrigerated even though they're canned). I can't wait!
Been eating it since the mid-1990’s and then went to Washjngton State, the cheese is great for parties kinda between a medium cheddar and Gouda. But the real secret is the ice cream at the dairy on campus that makes it. That stuff is crazy good

I've tried this and its surprisingly good. It was at a military event and they had a bunch of bomb shelter foods, one was refried beans you just mix with boiling water and they tasted fresh not 50 years old.
WSU student here, mix some in with regular cheddar for your Mac and cheese, my parents are based in TX and anytime I head home for breaks they make me pick up a few tins for them.

This is actually great cheese. My husband gets mad if I give them away as gifts because we have about ten in our garage fridge.

The more you have it the more you will love it! I currently have two cans again in my fridge, one will be opened at my wedding and the other is about a year old. Try it with pear slices on original triscuits and it’s addicting!
It’s good my grandfather gets it every year from my uncle and father, they live in Marquette and my father Washington state. Good times
