Caramelized cabbage is my favorite! Pickled is OK but fresh is great. My mom used to take the core and ribs off the leaves, chop them small with onions and butter, steam for 5 or so minutes and then let them caramelize. No waste and tastes great
Hi Rachel and Todd. What a way to start the week. I love it when you take the time to do different meals for the week. The two of you are awesome. Stay safe and God Bless you Rachel and Todd. thank you for sharing. Maria. 😇😇😇😇😇😇😇😇😇💗💗💗💗💗❤️❤️❤️❤️❤️👍❤️❤️👍👍👍👍👍👍💙💙💙💙💙💙
I am so starting to make oatmeal in my slow cooker. I had no idea or should I say, I never thought I could do that!! AND your chicken pot pie looks amazing!! I would really like to obtain your recipe. Thank you so much for sharing. I am looking forward to your next video.
I do it that way in a mini crockpot. Only takes 90 - 120 minutes for 2 servings. I mix half n half ratio of rolled oats and the fine oatrageous oats. Makes it creamy. I love it. I make it at night and stir once halfway through. Play with it, it is definitely a keeper.
Because I only go to town every two months, we eat like this most of the town. I think it’s a fabulous challenge and everyone should try it. Great video
I did great the first week, then started feeling sick on Friday. Went and got tested today and I am Covid+. So, family and friends have been bringing me goodies. Thankful for the family and friends! I am going to try again in February.
I make steel cut oats in my instant pot. I add chopped apples, dates, raisins, some pumpkin pie spice and a pinch of salt. Just the two of us, so it lasts all week.
Dump and go meals are great! Fancy meals makes it so hard to want to try, but watching quick meals makes me feel like 'Hey! Maybe I could do that too!'
You inspired me to check my pantry. Even though I don't have ready-made meals canned/preserved, (I mean, I do have some stuff preserved like spaghetti sauce) but anyway, this inspired me to check my pantry for stuff thsts been sitting around. I found steel cut oats, coconut and cocoa powder. I made chocolate coconut oatmeal for breakfast tomorrow. I added a bit of honey. Its a good way to use up stuff, so thank you for the inspiration!
I just told my husband that I'm trying to avoid the store after spending money on Christmas goodies, then there's no "You're not the boss of me!" component. If he comes home with something, then it is what it is! My littles get milk during this time, too, and my beef came last week, but that doesn't count as it was scheduled with the farmer. 🙂 Enjoy the yummy food!
I’m so glad you decided to join this - you have the best ideas. My pantry challenge so far has involved using up all the weird ingredients in my pantry so it looks a bit different - When I get to the part where I’m starting to use my primarily jarred food though I am totally going to be using some of these ideas - We loved your white bean chicken chilli you did awhile ago and make that one all the time. I’ve never attempted pot pie before - I think I’m going to try that with some of my leftover canned turkey ❤️. Thankyou!
Everything looked delicious. It's always inspiring to see what other people eat as it's easy to get stuck making the same few dishes over and over. I'm also attempting the challenge but didn't prepare so will be picking up dairy products. I did loads of freezer meals toward the end of last year, probably way more than a months worth for the two of us and have a chest freezer full of things out the garden and meat I've purchased over the last 6 months. It'll be good to get through some of it. I made homemade pizza dough this week and will be making my own bread for the month which I don't usually find the energy to do so it's nice to have that push into making the effort :)
I really appreciate your content. Be thankful and use what you have. A month of being thankful for what you could stockpile or preserve is, neat. Much to learn. Thank you.
I love seeing how you enjoy all of that hard work and love that goes into gardening and processing your food. It is very inspiring and all looks delicious!
I just finished carving up a ham that was on marked down 50% after Christmas. Vacuum sealed and label, bone, roast, slices etc. Cued up this video and see you eating ham and yams. LOL Always timely. Thanks for sharing. Just seeing someone else cooking inspires and create dishes you never would have thought of. BTW: your greens look GREAT!
I didn't have food preservation knowledge enough to fill a long term pantry. I'm learning now. I hope I'll be able to join the three rivers challenge next year. Prepping, food wise, is to have a pantry at the end of the growing season that gives confidence that you will have food to eat healthy till the end of the next growing season. Wither meal time comes with a big prep time or not, is ones individual preference.
Yes I too am really looking forward to next ,Racheal your pies are the best looking pies I have ever seen ,hope you show us step by step how to make your chicken pot pie ! Oh my yum!!!
Thanks for sharing. Hoping to pickup some new recipes watching. We eat from freezer every other month to use up what we have. With the virus causing issues, it's probably going to be a regular thing until we need to restock. Prices and less options are good motivation. Take care
I'm SO GLAD you mentioned your sous vide, Todd. I have been really mulling over getting one, but couldn't seem to think of what else I'd make outside of the egg bites my toddler loves. MEAT. Duh! As always, thanks for the inspiration!
Loved this video!! Interesting to see how you fixed your canned potatoes. I canned potatoes last year for the first time ever. Had not opened a jar until yesterday and wondered how to make them? So i just sliced them and pan fried them with sliced onions. DELICIOUS!!!! I will be making them your way next time and glad I canned them. Also....just loved the crunch when you cut into that pot pie! OMG!!! crispy crust! I gotta go back and watch some more of your videos! I do love your channel Blessings
I am loosely following along with this challenge as well. More emphasis on making some room in the freezer for my son's bday DQ ice cream cake at the end of the month.
I think you did awesome! I wanted to tell you Rachel that I made your pickled cabbage, and both myself AND my husband love them! I will have to try your caramelizing method and see how we like them. Thanks for sharing your week with us - I really enjoyed watching 😍😍
I’m really enjoying this challenge. I didn’t prep going in but it’s day 10 and so far so good. I grow a garden, can, freeze and freeze dry. Would love to try the Korean beef bowls they sound so delicious. The only thing that I don’t have enough of is greens. I should start some sprouts🤔. I budgeted $20 for the month of January, super frugal but if necessary I could stay in budget. Haven’t needed to grocery shop yet. Thank you for the meal inspiration.
I love that you guys are doing the pantry challenge! We loved doing it last year and everyone can do it the way you want, you're not really supposed to "prepare" anyways. We give ourselves a mini budget incase we run out of things!
Love when you both cook and Todd, when you get “Chefy” love that even more! (No offense Rachel 🤣) but you both are very inspiring!!! ❤️ y’all, Kristy in Missouri zone 6b 😃🇺🇸🇺🇸🇺🇸
Hi Guys , Fun video. Want to let you know I did your chili base this year , opened the first jar yesterday . Cooked up a couple of hot sausages , tossed in some extra peppers and onions , added a can of beans and it was delicious .Funny thing is that when I was making it I accidently dumped in the entire jar of cumin and had to dig out as much as I possibly could. Still left with a touch too much cumin. I wrote cumin on the jar with a question mark. I got a chuckle out of you labeling yours no cumin . The other thing that made me smile is that my partner came home with a big ole block of cheese today even though we swore we weren't going to buy anything. . Thanks for sharing.
I'm doing this challenge but allowing 25.00 a week. We are a family of 6 and I didn't prepare at all for this and already needed to go to the store pretty bad before we started.
i like this challenge. love all the vids. even though we're apt dwellers I became a prepper. We went from freezing (two in a half freezers) to dehydrating and canning. we're at capacity and are starting to use the products produced. FYI it also started with couponing and finding great deals. Our dream is to get back to land and be more natural.
We are doing our version of the pantry challenge. Even if it hadn’t been encourage to set your own rules we would have needed to. We didn’t have much this year from the garden and we don’t have animals so dairy and fresh fruit and veggies are going to be purchased two times a month. I’m going to make bread after we finish whatever bread we have in the freezer. So, it’s not as detailed as most but it’s what we can do. Maybe next year we will be in a better position to be able to participate at a higher level. You made some great meals!
My favorite is your pickled cabbage, which I never use to like until I tried yours. I went in the pantry today to pull some out for my pork tacos and had to gasp cause I pulled out my last jar of cabbage so I know what I will be making this week lol. Even tho I have to go buy it from the store its worth it cause its that good.
Everything looks fantastic. I'll be giving those Korean Beef Bowls a try they look so good. Haven't made pot pies in a while, Hubby would probably like me to make one. YummmYummmYummm!!!
I'm doing the challenge this month. So far I have bought nothing. I pulled out my bread maker when we ran out if bread and powdered milk when we ran out of milk. I also have some shelf stable milk that is close dated sooo. So far...I haven't cheated.
I'm doing Suttons Daze pantry challenge (sounds like the same). Planning menu for 2 months out is a first for me, but keeping me on track for not spending any grocery money (except perishable items). I'm really liking the challenge.
All these meals looked amazing! Do you have the recipes anywhere? I know some things were made as you go but I would love the Korean Bowl recipe and the stuffed bell pepper etc. Delicious!

I also watch Three Rivers Homestead. Good way to use up some of the older pantry items and get organized. TFS 👍
So glad you are participating! I really enjoyed this video!!
You guys should do a video on different ways you cook your home canned potatoes!
Rachel! Thanks for taking us through a week of meals. Love the Naan bread pizzas ideas-I wanted to jump through the screen!!!
Love this and love how honest you guys feel about being somewhat forced to clean out the pantry! Wonderful video!

I've really only ever used mine for meat so far. I do want to try a batch of creme brulee sometime though ♥
Doing the same here. May even run into February just need to cut down on what is in the freezers.
Had never thought to cook oatmeal in a slow cooker. Gonna give it a try.
This weeks challenge meals looked so amazing! That Pot Pie though....
Pot Pie is so good. and so easy to make. Love all the ideas.

Hubby snd I are eating primarily from the pantry this month. Bought some celery for fresh crunch! Soup has been shared with three Covid sufferers!
Did the same for a covid family member last night. Dropped off some soup on their porch ♥
Thank you! Everything looks amazing!
This is so fun, everything is fun and interesting that you guys do !!TY!!
So many good ideas. Thanks
Very interested in seeing you do the sous vide ribs Todd. Something I've wanted to try and haven't gotten around to it.
You guys inspire me. Love this.

Everything looks really good and comfort foodie! And I love your special effect Etch-a-sketch beef at 14:54! 😊 And how were the ice cream sandwiches?
Omg, thought my eyes were playing tricks on me! 🤣
What was up with that beef? Freaked me out.
So glad someone else saw that weird ground beef stirring ...
@@cnk2hoo same here! I had to rewind.
I'm doing this challenge but allowing 25.00 a week. We are a family of 6 and I didn't prepare at all for this and already needed to go to the store pretty bad before we started.

I love pantry challenges.
Now you can freeze dry cheese for next year. Just got myself a freeze dryer for Christmas 😁
I saw that you have rice in the jar, (stuffed pepper soup) rather than adding to a soup base...I'd love to try it..how was the texture of the rice?
Great Job!! That pot pie....😋😋😋😋
Great video! Lots of great ideas!
Good job guys.....I'm hungry now! Cheers
My kids didn’t care for potatoes until I made them your fried onion/canned potato/cheese dish!
The pot pie looks amazing!
