I’ve gone a little crazy with this recipe! I use most of Fan’s ingredients except sea asparagus and dried tomatoes. I add a thinly sliced round of red onion, some cauliflower florets, a sprig of baby broccoli, replace the button mushrooms with whole shitaki mushrooms, and cross two asparagus spears on top. Then I sprinkle fresh rosemary and thyme leaves along with salt, pepper, and olive oil on top. I discovered that I can use three little bulldog clips to keep the parchment paper from unrolling during baking. This is a favorite dinner at my house. Everyone gets their own parcel. I have returned to my plant based journey and your channel has inspired me immensely! My husband is fully keto with meat but I love that we can find the Middle together this way. I just finished making this absolutely delicious parcel. I didn’t have the sea beans but used pickled green beans and it was wonderful. I’m so very grateful to know your channel exists. Thank you.
Instead of the cheese, I added some tahini all over the vegetables and put it back to the oven for another 5 minutes. Wow it was so good!! 😍 I ate it everyday for the past week. I love it. Thank you again for another great vegan keto recipe!
I tried this today, directly. It is sooooo good, it’s amazing. It’s just vegetables. Easy to do, with any veggie (I did not have Kale or sea asparagus but used cauliflower and a mix of algies that I sprinkled generously on everything. I’ll definitely do that again and again ! Thanks
This is so so delicious 😋 It will be a regular from now on. You have enabled me to still remain vegan and keto. I used to swap to keto because I felt good, but, couldn't eat the friends, after a short time... I felt stuck..... Now I've lost nearly 4 kilograms in 4 weeks, and post menopausal, that is almost a miracle. Also. I can eat sooooo many veges and remain in ketosis. I do not count or measure any more You are my angel, thank you Fan 😊 💓

That is a wonderful arrangement of fantastic vegetables in that parcel. Bon appetit Fan. I prefer without the tofu ofcourse but everything else looks amazing, especially the garlic. I also am a big fan of olive oil, so anytime I see a recipe that gives me the opportunity to use lots of olive oil I want to give it a try. Can I ask you if you need to take any suppliments when you are a keto vegan? I have for health reasons (low kidney function) have had to move over to plant based food. I just dont know what I need to add in suppliments to get all I need. I have heard vegans need B12 (?)

This recipe looks wonderful. My grandmother was from Italy, she cooked with fennel/garlic/sun dried tomatoes often.

Supplements are very individual, but for vegans B12 would be a very good start. Plant-based foods are joyous and delicious. Enjoy your new path x
