I add caramelized onions and carrots to my sauce instead of white sugar because I was traumatized by sweet spaghetti as a child. Sweet onions and carrots have a natural sweetness to them when cooked down. Works perfectly for cutting the acidity and adds a bit more depth of flavor and nutritional value. People definitely be adding too much. I thought the whole purpose of that crap was to make the sauce sweet lol good to know it isn’t.
It’s a southern thing I grew up on that meal. Some people say it don’t go together, but where I come from it do and it be so good. Make sure your fish crispy though.
