Making a Horse Head Cake

I was asked to make a cute horse themed Birthday cake for a young girl who loves horses. This is how I made it.
I began with a 12" square cake.

Did you use enough batter for two layers or one and also is it ok to use just fondant its hard to find marzipan where i am.

My cake was deep enough to slice into two layers. but would work the same with one. Just using fondant is fine.
