Ive only seen one project that uses the Codec2 or OPUS codec for low bitrate audio communication over LORA on Github.
I know theres other applications more suited for voice, but is audio in the future for Meshtastic?
We've got a developer that's working towards a way to send short voice clips over the mesh using codec2. Hopefully something concrete to report soon.

Any idea why it says delivered but i don't see it on the receiver?
For a regular text to a channel, received just means that another node has seen the message, which may not be the node you're checking. Traceroutes can be a great way to see what's happening on your mesh.

Is it possible to do something like an RF gateway/bridge .. kind of like MQTT but say, it can be on a mountaintop and have one directional antenna one way and one the other way, so it creates two subnets that can communicate through said bridge. Or it could be two towers that link through two long range directional antennas.
Yes! There has been a bit of chatter about a Pi hat with dual radios on it, that would be perfect for this use.

I generally limit bacon to once a week, on a Friday.

Meshtastic being sold as a disaster comms device is a joke .
Full of collisions corrupting messages and will become unusable.
A better solution is a hand held radio. If you like texting just use rattlegram and your handheld radio and you have reliable comms .
We've run networks of over 100 nodes without becoming unusable. Collision handling works like any other wireless network. But if handheld and rattlegram works for you, that's great!
There are 104 channels to use to spread out the traffic
If there's too much chatter for your taste on a default channel, OP, all you have to do is set up your own private channel. Presumably any other radios out there running the same mode are set to "repeat all" and will form part of your net.
