    The scallop of the garden..the oyster mushroom features right up there with the Porcini, Shitaki, Portobello, Chantrell and Enoki. A very delicate fungi though, best enjoyed without the use of strong spice, simplicity is key, Sol got it spot on with basic complimentary seasonings that enhance rather than overpower the flavour of this mushroom. This is a perfect fit with creamy risotto, just the right texture as well, a splash of olive oil, a sprinkle of parsley, a pinch of salt and the subtle kiss of garlic, these are basic undergarments for this mushroom. This is the perfect canapé, it will go very well with a spoonful of gremolata or as a main, on a lovely risotto, perfectly centered. Keeping the magnificence of such a dish would be respecting this fungi as the star of your dish, this is a delightful mushroom, it has texture, flavour and an unusual character leaning between the rustic and exquisite. Sol has definitely exemplified the beauty of this mushroom by focusing on the emphasis of the fungi, again simple yet classy. This is something utterly marginal that most people know absolutely nothing about, yet, has the potential to do completely amazing things...class and simplicity, top dish Sol, perfectly executed 👏🏼👏🏼👏🏼👏🏼
