    Getting ready to do a large slab of ribs. Going to use water. Would you suggest briquettes over char logs? If char logs, how many should I use?

      Fill the fire box if using water. Just don’t let the water run out.

      I filled firebox up with unlit char logs and spread a half chimney of lit charcoal on top. Filled water pan to about 1” from the top. Temp never got above 170. After about 4 hours, ended up finishing ribs in oven. I suppose I should have had more lit charcoal and less unlit logs. Or, maybe less water. Not sure why the temp stayed low.

      @@michaelpagan3570 wow. I usually start with a full chimney of lit coals. Let it come up to temp before you put ribs on. never have to add anything water or coals. It likes 225-250 depending on the type of charcoal.

    Same amount of briquettes if you put sand in the water pan?
