I like thighs as they are forgiving. I can't cook breast for nuts as they dry out after 20 minutes when the judges eat them. You can do drums also and teams win on drumsticks.

Yes, you cut it to fit a half pan using a wire cutter pliers. You can use the pizza grate also to set the sauce so it's easy to get the thighs on and off your smoker.

There is no technique to smoke rings. It doesnt mean anything except a chemical reaction when smoke hits the meat
