Another great find. Most people in Los Angeles don't travel to Inglewood. There are Cajun, BBQ, Jamaican, Belize, Nigerian, Ethiopian, Pakistani, Somalian, and a variety of Central American and soul food restaurants in town. You'll find very authentic, home style cooking.

The legend of how "doubles" got that name is this: it's originally a street food brought over by Indian indentured labourers and was originally called "bara" (the fried dough shells) consisting of only one bara and topped with channa (chickpeas). Then one day a buyer at a popular seller asked for a "double" or two baras with the channa instead of one. This caught on and eventually everyone was asking for a "double" and the dish eventually became referred to to as "doubles". Many different sauces and chutneys (condiments/salsas) have been added over time from tamarind, mango, cucumber, coconut, pommecythere (juneplum/golden apple/ambarella), moolai (white radish), chilis etc. It's traditionally sold from a box attached to the front cart of a bicycle.

Trinidad have Indian and African influences. Post abolition of slavery there was a labour shortage. They imported indentured labour from India and the rest is history. This is pattern across the Caribbean. Jamaica has indentured labour from mostly India and China. The Jamacian peoples are VERY diverse. Its motto is "Out of many ,one people" That is why the cuisine across the region is so varied (African, Chinese, English, French, Spanish, Portuguese etc)

The pholoori is made from chickpea flour, also known as besan which is a pretty common thing in south asian pantries and cuisine. The rice, dal, fish plate looks like something we might commonly see on the streets of cities of west bengal in india or bangladesh too.

Me being one of them. Sorta
Two of the biggest ethnicities in Trinidad are lndian (from lndia - came as indentured labourers from different parts of lndia after slavery ended) and African (came as slaves). Others are Chinese (also came as indentured laborers), Native (Taino, Arauac, "Warrahoon" etc), Spanish, French, British, Venezuelan, Portuguese, Syrian, Lebanese. But the largest ethnicity is "Trini".

The Dahl goes over the rice, the fried cumin seeds is a good sign of a great Trini dahl. That curry fish looks good. Those doubles and pholorie looks so good. I would exempt the tamarind sauce LOL.
