Homemade Mini Cheesecake Recipe | I love these silky cheesecakes that have the best texture. No water bath needed and easier to perfect given their size. Be sure to chill your cheesecakes (2 hours in the fridge or overnight) after baking, then add toppings. Mini Cheesecake:
Crust:
1 cup crushed graham crackers
1 1/2 TBS sugar
3 TBS melted butter
Cheesecake:
16 oz.cream cheese, softened
3/4 cup sugar
1 1/2 Tbsp all purpose flour
2 large eggs
1 tsp vanilla
1/4 heavy cream
1/4 cup sour cream
