  • The cake I presented in this recipe video is called by different names, I call it Cream Tart, but it is also known as Number Cake, Letter Cake or Tart Cake and thanks to the simplicity with which it can be made and the great aesthetic impact it enjoys at the moment of great popularity.
    The Cream Tart usually, when used to celebrate birthdays is made in the form of a number or letter, but if used for special occasions, as in this case to celebrate Mother’s Day its shape can be at heart or any other geometric shape.
    To make the Cream Tart there is no single recipe or pastry bases, as there is no unique way to decorate it, it will all depend on the occasion for which it is made, the tastes of the celebrated and even the period in which it is made.
    The most used bases to make it, are whipped pastry, sable pastry or puff pastry, but nothing prevents you from using simple sponge cake or maddalena pasta, in this case I used sable pastry.
    The same applies to the filling, usually camy cream is used, but any cream that has a consistency adequate not to collapse the cake can be fine, I for example or used orange namelaka. For the decoration, apart from the classic spikes made between one floor and another and to cover the cake that is absolutely mandatory to do, there is no limit to your imagination, Of course it is essential to match the colors of the decoration so as to obtain an attractive chromatic effect that will make the cake stand out in all its elegance.
