@@micomator crumbling the paper can make it last longer lit. Also instead of one large paper. We prefer to cut it in two medium sized ones. Also lighting the paper in three different spots , gives more chances of all bottom ones being lit at same time. Also make sure that where chimney is placed, you get enough wind or oxygen. Have you tried changing charcoal brands. Placing charcoal in a non damp or humid location. May also help. We use the same shipping paper that we get from deliveries. We save them . Good luck. I char my ribs directly over the coals for 3 mins each side first. Then smoke on non charcoal side for 1.5 hrs turning a couple times. Will have to add more coals half way through the process. Comes out perfect every single time.

That rack was too large for that size grill so it's hard to get true indirect hence that bark. I would personally have cut the rack in 1/2 and stacked em as far away from the coals as I could. Spares would be easier to keep indirect.
It would just make it taste better. You might have to keep a eye on it , because of the sugars on the sauce. Maybe wrap it once you have gotten the desired color
Yes, there's the over the charcoal regular grilling way using Abit less charcoal so it won't burn, flipping every few minutes done in less than 1hr. The second way is cutting the ribs in each bone section to have them in pieces. Or third you can add more coal bringing the grill temperature higher they will be less fall of the bone soft but still will be great. We Just did all three methods this weekend and they we're great.
Yes ( if it measures 175-180F Degrees) if not then you might have to give it a few extra minutes or it can be even a few minutes before,that is why the thermomether is important. then 30 minutes in foil ( or butcher paper) and that is everything for cooking. then is up to you if you want to let the meat rest 15 or 30 or 45 minutes before carving, and this would keep the most juices inside. good luck
Those things are darrrrkkkk they gotta taste a bit like soot I woulda cut the rib tips off take a sharp knife and cut done the edge of the main bones to square them up and do the ribblets next to them they cook at two different times anyways both will come out better and more tender
+tonton heredero are the air vents open. The vents should face the wind. Or it can be that they are not fully on , when you place them. Have you tried with a different brand of charcoal just to do a test. Moving them around ussually turns them back on.

rib rack is the simplest way to go, you can place it in the middle have water under , split charcoal 50/50 on both sides. good luck 😊👍💪

You do not need to soak wood, but bury large chunks under the charcoal
