@perniciouscarrot7528 that is a wild Alaska Sockeye Salmon, what toxins are you talking about? You can eat that fish raw and be fine (although you should freeze or dry it first because it may have parasites like any wild fish, but not toxins like mercury you get from farmed Atlantic Salmon).
@ryanburnham1932 I had a friend whose kid did mercury testing on great lakes salmon in college. He said that most of the mercury is in the fat that we don't eat, but they did the testing on the entire fish making the true mercury readings less than reported.
When I went fishing in alaska it was the damn seagulls you had to look out for,Biggest gull I ever seen. If you went paying attention they would fly by and grab fillets of the table.
Neither way shown is from a master. There's a lot wasted. This should not even be shown as a way to fillet a fish. Feb 22 Please watch a True Master ReedtheFishmonger here on RUclips. Those deckhands should watch how to properly fillet. They will earn more tips as most fishermen like to see their catch being processed. I for one tip better when I see better dedication to their craft.
@adibchowdhury5709 Dude it's not about speed. It's about respecting the meat. It's about respecting the customers who paid for the privilege to eat the whole fish and not 60-75% of the available meat. That carcass was loaded on both sides of the vertical spine bones. The collar was tossed away like trash. He probably tosses away the roe with the guts. SMH
@STODAKINEbrother I live in Bangladesh and here we don't have the privilege of wasting fish or any other food, we even cook the fish including the head so you don't have to tell me the wastage. I just meant that these guys have skill and many can't do what they do. And come on man 60% of the meat is quite an exaggeration. I'd say they got about 90% of the meat (guts and bones not included)😂
I worked in a salmon factory back in the day, my ass would be fired if I did that. To much waste, but for the everyday fisherman it doesn’t matter I guess. Still good knife handling 👌
Yeah, we always took the head off and then went in at the butthole and straight up the belly making sure not to go too deep in case off eggs, eggs is where the real $ is. We had machines that did all the work but sometimes you had to get in there and get....dirtier.
@kajsorensen1207well, the head, the eggs if it is a female, and the back muscles? I'm just repeating what some people who seemed to have worked there are saying.
@titanus261 hardly anyone eats the head. The “back muscles”? The strip above the spine is cartilage, nearly everyone doesn’t eat it. 99.9% of people don’t take the time to boil bones. I wouldn’t call it waste.
I once caught a Wild Brown Trout, on a chalk stream (River Lamb) and ate it. It was vibrant red like the second Salmon and the best fish I have ever eaten.
@SeaFoodCut You are ignorant to identify Salmon. Second Salmon is a male Sockeye not a Silver Salmon. That was the Kenia R . learn to butterfly a salmon so you don't go wasting all that meat
@NotedEcho Since 1978 I've had one income from my own professional hunting and fishing services, and I have worked the Kenia River that you see in this video. So, you want to tell me what I am ignorant about that you think you know more than I do about Salmon & Steelhead?
Real fileting takes the skin off too. Stop the first pass at the base of the tail. Flip the fillet, and take off the skin. The only people who expect skin on a fillet are people buying it at Costco. Commercial suppliers leave the skin on to cut costs.
You should always keep the bones and head. They give the richest bone broth that is extremely good for your skin (more bioavailable than beef bone broth is.)
I love it, I like the guy that’s guts the salmon by the river because he doesn’t throw anything away. Even the carcass goes back to the river. Thank you:)
The second guy did break the rule when he started cutting the second side of the fish. As he was cutting behind the gills he had the knife cutting towards his hand.
There is noting more tasty looking than red fresh salmon meat. No matter if I have just eaten dinner or what I always get hungry when seeing videos like this.
I've only ever done catfish but I have done a lot of catfish. I do the second guy's way but not nearly as quick or perfect. The only thing I do different for catfish is I do light cuts and use skinning pliers to get the skin of before I fillet. That guy is at a level I will never reach lol.
Which style is more Hygenic … not exposing the filet to the contamination of the guts . This would be considered the difference between Kosher and Non Kosker Lox for your bagel
Both styles are pure mastery 🐟🔥 which technique do you prefer?
Edit: the second fish is in fact a Sockeye salmon…Sorry about the typo!
Second one.
mastery of what? cutting? bro .. Keep talking about guns, it's your passion
For sure aphalate, at least thirty salmon, and it's like the first time every time
I cut mine where all the bones an guys are left on the fish
1st one.. second got too much risk of knife not being away from him..
The color on the 2nd fish was absolutely stunning and vibrant !
Yes, exactly…I am sick and tired of farmed salmon 😂
@SeaFoodCut Its 5x more toxic than other farm raised fish
Because that is a Sockeye not a Silver Salmon
@perniciouscarrot7528 that is a wild Alaska Sockeye Salmon, what toxins are you talking about? You can eat that fish raw and be fine (although you should freeze or dry it first because it may have parasites like any wild fish, but not toxins like mercury you get from farmed Atlantic Salmon).

Thanks for the comment! But fishermen do it to put some nutrients into water

Well. I’d probably be pretty damn fast too if I was skinning a salmon in bear country.
😊😊👍👍
Spot-on! LOL Been there, done that.
When I went fishing in alaska it was the damn seagulls you had to look out for,Biggest gull I ever seen. If you went paying attention they would fly by and grab fillets of the table.
What is bear country? Russia?
@Ben10_0Alaska

😊! There is waste, but it is for other fish and birds like seagulls
Well, I'd be making fish stock or soup with the rest. I do hate wasting good quality food.
Bro he did it in like 20 seconds! You really gotta hate? Some people just can't appreciate a man's skills.
@adibchowdhury5709 Dude it's not about speed. It's about respecting the meat. what do you consider waste? these are meant to go from river to plate.
The color on the second fish is absolutely beautiful
Thanks for the comment! Exactly
It’s red40
😊😊
Fact.
That speed is incredible 😮… the size of the king fish is also twice the size of silver salmon.
Yes, it is
Thanks for the comment! 😊😊

The second guy broke the knife away from hand rule hella times lol
😂😂😂
and the ai lying
👌👏💯
I once caught a Wild Brown Trout, on a chalk stream (River Lamb) and ate it. It was vibrant red like the second Salmon and the best fish I have ever eaten.
That’s awesome! Wild fresh fish has different superior taste and texture 😋
@SeaFoodCut You are ignorant to identify Salmon.
Second Salmon is a male Sockeye not a Silver Salmon.
That was the Kenia R .
learn to butterfly a salmon so you don't go wasting all that meat
@dalebenson6859 " You are ignorant ". I really hope you guys aren't grown men typing like this.
@NotedEcho Since 1978 I've had one income from my own professional hunting and fishing services, and I have worked the Kenia River that you see in this video.
So, you want to tell me what I am ignorant about that you think you know more than I do about Salmon & Steelhead?
@NotedEcho be careful what crap you send or get reported for harassment - that is your only warning PUNK !
Never seen a fish fileted on a door mat before but hey, I guess it works.😂
😂😂 yes it is a good trick to keep the fish steady
That's not a door mat. Every commercial fishing supply store carries fishing cleaning mats just like that where I live.
😢
The fishermen throw away the most delicious and rich in nutrients, part of the fish. Liver, heart , eggs, skin, head, bones - the most valuable.
True 👍👍
Also the most gamy or fishy. Those who can't handle this taste it's junk an it leaves food for others fish to grow bigger
@crevildeadoneGuts, blood, gills and bait left overs
will be a dissent diner for local inhabitants.

Thanks for the comment! That’s true!
But the skin is the best part
Yeah sure. It's salmon. Skin stays on for cooking.
Not on a salmon!! EVER!!!
No, that is called "skinning".
Thanks for the comment ❤. Maybe 😊
I have a 3rd method though.
👍👍👍👏
I do too, I go real slow and fuck it all up lpl
👍👌👏
The scraps are bait..wt😅
scraps are for the micro organisms for the river. its required to dump scraps back in some area's. in others its illegal to dump back in.
😅😅
Bro showed 2 different fish species
the first one is a common, cheap atlantic farmed salmon
the 2nd one was a pristine, wild caught Sockeye salmon
👌👍
Guts which could be cooked with rice thrown away, black areas which tastes even better also thrown away.
Thanks for the comment! Yes 😢
the guts commonly have parasites. the black area's is just the blood line, you are supposed to remove it.
That 2ed guys a genius beautiful technique
👍👌
If I ever catch a fish big enough to have a "belly", I'll have to try this.
❤👍🔪
depends on where you catch it. erie or ontario lake you should avoid belly meat.
Dont its a waste just do it normally
👍👏👏👏
Honestly 2nd is better because first one risked cutting the organs. So idk for me second did a cleaner job.
👌👍
"never points the blade towards his hand"
Shows him swinging at a hanging salmon carcass in his other hand
Thanks for the comment! 👍👍
👌👏
Different fish different size and different style
Also I just notice it one is left handed
👍👌
You should always keep the bones and head. They give the richest bone broth that is extremely good for your skin (more bioavailable than beef bone broth is.)
Agree 💯
Growing up on the siletz river my grandfather showed me how to completely debone a salmon with proper cuts.
👏👍…Kudos to your old man 👨🦳👏
Elite! now if we can get a time on the fastest catch fillet grill and taste
👍😊
Watching competent people work is fascinating.
Thanks for the comment!
Bro you cant really compare two masters. Since they are already there...
Thanks for the comment! 👍❤️
👌👌👏
Good idea cutting the waste for the fish in the water to eat!
❤👍👍👏
its not for other fish. its for things like crustations and micro organisms.
I love it, I like the guy that’s guts the salmon by the river because he doesn’t throw anything away. Even the carcass goes back to the river. Thank you:)
Thanks for the comment ❤! 👍👌🙏
👍💯
Oh yeah super top 🎉 fabulous nice skill's/work.📽🏅
Thanks for the comment!
Thanks for the comment! 👏💯
I hope they save them bullies, thats almost the tastiest part
👌
There's a stock trading adage about giving up the head and the tail, but throwing away the best part isn't the art.
👌👍💯
They make it look easy. Many a fishes to get to that point. Well done.!
Thank you for the comment ❤️👍
second guy litterally cuts directly towards his index finger when slicing the collar. He broke the golden rule.
👏 🙏… My bad
I like how the king is cleaned, but I like how the silver looks
👌👍
Yet neither of them snagged the cheeks. Those are some of, if not the best cuts on a salmon.
👏👍
Second one was my favourite 😊
😊
So he wasnt chopping the left over fish towards his other hand then
😊😊
😅
The second guy did break the rule when he started cutting the second side of the fish. As he was cutting behind the gills he had the knife cutting towards his hand.
Thanks for the comment! 😊😊
I miss salmon fishing on the Columbia R. Always Had a freezer full.
Thanks for the comment ❤! 😢
Man, I hate that AI voice.
Same here…but sometimes you need that
Oooh!!😮That there knife is SHARP !!
💯👍
The orange on that salmon looks 🔥
👌🙏
He pitched the belly . That’s the best part . Leave it on the fillet ! Believe me I had a troller for 35 yrs 😊
😊😂
You can’t judge these two saying which is better worse or more skilled as they wearnt using a controlled experiment with the same fish knife and time
💯👌
There is noting more tasty looking than red fresh salmon meat. No matter if I have just eaten dinner or what I always get hungry when seeing videos like this.
Thanks for the comment ❤👍👌
The knive wear faster with the second guy
👌👍
Wish me good luck
Sure 👌
The 2nd fish literally jumped out of the water for this video
😊👌👍
👍👏😊
I keep the bone and cook over the grill with Teri sauce
That is the best way to avoid waste & the taste is also amazing 😋
Sound like bones breaking

👍
It's got nothing to do with speed, the knife is the hero here!😊
Thanks for the comment ❤! knife is important, and so are the skills….
💯👌
"never breaks the golden rule-knife away from the hand".. ten seconds later, aggressively swings knife toward his hand..
😊😊
Did anyone notice the second one was cutting the salmon on a door mat
Thanks for the comment! 😂😂😂
thats to hold it still. fish slime with no glove.
Fillet and release program 😂
😂
The knife is sure facing his hands when he hacks the carcass up at the end.
😊 thanks for the comment!
American fishing man they are excellent technique making fish❤
👌👍
I've only ever done catfish but I have done a lot of catfish. I do the second guy's way but not nearly as quick or perfect. The only thing I do different for catfish is I do light cuts and use skinning pliers to get the skin of before I fillet. That guy is at a level I will never reach lol.

Like Art as good as Pacoso with a Brush 😅
😅
It's actually: "Knife away from the body".
Lovin it!!!!

Good point! Better to wash before consuming
So fast the fish head still alive when it goes back into the water
😂😂 … thanks for the comment!
And at the end he does seriously dangerous hacking toward his hand. ??
😊😊
He sliced towards his hand at the end
😂😂
Id be fast to if i had to throw away half my friggin fish!😂
😂😂👍
😢
I want to know how he sharpened that knife. Both of em
In the future videos we will know
thrown away the best part 😅😂
😂😂😂
