      ​@perniciouscarrot7528 that is a wild Alaska Sockeye Salmon, what toxins are you talking about? You can eat that fish raw and be fine (although you should freeze or dry it first because it may have parasites like any wild fish, but not toxins like mercury you get from farmed Atlantic Salmon).

      @ryanburnham1932 I had a friend whose kid did mercury testing on great lakes salmon in college. He said that most of the mercury is in the fat that we don't eat, but they did the testing on the entire fish making the true mercury readings less than reported.

      Буквально все рыбаки кого знаю, такие части бросают обратно в воду, если готовят прямо на реке, иногда, конечно, и голову и брюшки варят/жарят и едят, но это уже кто как любит

      @Marksist87 Ну так это явно не домой так разделывают, а на месте готовят, плюс всё это будет подкормкой для новой рыбы и насыщения местности витаминами и прочим, за счет такого на этом месте будет ещё больше рыбы, поэтому так и делают, ну и такая рыба всё же зачастую на пресных водоемах именно нерестятся, так что их там много

      When I went fishing in alaska it was the damn seagulls you had to look out for,Biggest gull I ever seen. If you went paying attention they would fly by and grab fillets of the table.

      это делается для того чтобы в воду добавить питательных веществ, так принято увы , просто мы два разных мира они и мы в странах снг и россии, они богаче , а мы нет вот такое различие, и они берут только филей, а мы всё

      @АлексейХимутин Конкретно в этой ситуации, вы не правы, так делают процентов 90 рыбаков, когда разделываешь и готовишь рыбу сразу на природе, всё что срезано лишнее идёт на подкормку в воду, другое дело что дома ни у нас ни у них никто не выкидывает просто так всё (не считая потрохов, хотя и их много где едят), иногда рыбаки из костей (хребет) варят бульон, потом выбрасывают также в воду, рыбы, особенно хищные всё съедят

    Neither way shown is from a master. There's a lot wasted. This should not even be shown as a way to fillet a fish.
    Feb 22 Please watch a True Master ReedtheFishmonger here on RUclips. Those deckhands should watch how to properly fillet. They will earn more tips as most fishermen like to see their catch being processed. I for one tip better when I see better dedication to their craft.

      @adibchowdhury5709 Dude it's not about speed. It's about respecting the meat. It's about respecting the customers who paid for the privilege to eat the whole fish and not 60-75% of the available meat. That carcass was loaded on both sides of the vertical spine bones. The collar was tossed away like trash. He probably tosses away the roe with the guts. SMH

      ​@STODAKINEbrother I live in Bangladesh and here we don't have the privilege of wasting fish or any other food, we even cook the fish including the head so you don't have to tell me the wastage. I just meant that these guys have skill and many can't do what they do. And come on man 60% of the meat is quite an exaggeration. I'd say they got about 90% of the meat (guts and bones not included)😂

    I worked in a salmon factory back in the day, my ass would be fired if I did that. To much waste, but for the everyday fisherman it doesn’t matter I guess. Still good knife handling 👌

      Yeah, we always took the head off and then went in at the butthole and straight up the belly making sure not to go too deep in case off eggs, eggs is where the real $ is. We had machines that did all the work but sometimes you had to get in there and get....dirtier.

      @titanus261 hardly anyone eats the head. The “back muscles”? The strip above the spine is cartilage, nearly everyone doesn’t eat it. 99.9% of people don’t take the time to boil bones. I wouldn’t call it waste.

    I once caught a Wild Brown Trout, on a chalk stream (River Lamb) and ate it. It was vibrant red like the second Salmon and the best fish I have ever eaten.

    Real fileting takes the skin off too. Stop the first pass at the base of the tail. Flip the fillet, and take off the skin. The only people who expect skin on a fillet are people buying it at Costco. Commercial suppliers leave the skin on to cut costs.

    You should always keep the bones and head. They give the richest bone broth that is extremely good for your skin (more bioavailable than beef bone broth is.)

    I've only ever done catfish but I have done a lot of catfish. I do the second guy's way but not nearly as quick or perfect. The only thing I do different for catfish is I do light cuts and use skinning pliers to get the skin of before I fillet. That guy is at a level I will never reach lol.

    Which style is more Hygenic … not exposing the filet to the contamination of the guts .
    This would be considered the difference between Kosher and Non Kosker
