I just made this and it smells amazing. I sautéed onions in the olive oil until soft, added all of the herbs in olive oil cooked for a couple minutes, and then added fresh pressed garlic. This was about the only changes I made besides using my own Italian seasoning blend. For my husband I added a little bit of fresh grated parmesan to cut the acidity of the tomatoes. I made it a none pot by using my cast iron enamel coated Dutch oven and left it in that pot to bake since I did not want to make more dishes. This is a great recipe that I am saving to my playlist. Curious, if the tortellini is already cooked why bake it for 30min shouldn’t it be until the cheese is melted?
