Budin de Pan / Puerto Rican Bread Pudding - Easy Puerto Rican Recipe

  • We eat a lot of bread in Puerto Rico, which means that sometimes we can find ourselves with some leftover bread, but that's nothing to worry about. We can put that to very good use! We make budin! This Puerto Rican version of bread pudding is so delicious - it's rich because of the caramel and the consistency is somewhat of a mix between traditional bread pudding and flan. My great grandpa lived to be 98 years old and the one thing that he would bake until the very end was this recipe - so it may even be a prescription for longevity!

    Ingredients
    Caramel:
    1 ½ cups of sugar
    Infused water:
    1 cup water
    ½ tsp whole cloves
    2 cinnamon sticks
    ½ tsp nutmeg
    Budin mixture:
    3 cups evaporated milk
    ½ cup coconut milk
    ½ cup whole milk
    1 cup heavy cream
    1 ½ cups sugar
    ½ cup of infused water (see above)
    ¼ cup unsalted butter, melted and cooled
    ¼ tsp salt
    1 tsp vanilla
    4 eggs
    1 cup of raisins
    1 loaf of French bread or pan de agua (2 days old)

    OMG!!! this is perfect! I make my grandmother's recipe (a bit different) and I lost it in a house fire. I remembered most of it and I was missing one thing! Which you include, the "tea" at the beginning. I knew it had anis and the cinnamon stick, the 3rd I couldn't remember for the life of me! 🤣

    *Thank You Jeff and Jo's for your recipe and for yet another reason to believe!.*
    *When I was growing up, at home We would have "budin", when Mom had extra or old bread in the house and not always was the same type !*
    *She added sweet bread, white, Italian bread, 'pan de agua', even the bun or hero breads to the Mixture. Or even Bakery's bread or the one we could get at every local "Reposteria". Moca has at least ten on each of its 12 boroughs. I would say plenty sweets tooth and we know "Budin".*
    *Today I make "bupin" similarly to my Mom's.
    I love making just like Jeff and Jo's a whole big. Some people like softer version others denser. I am neutral.*
    *I bet that Jeff's and Jo's "Budin" taste beautifully authentic from what is known in PUERTORICO a festive reason to gather an celebrate.*

    Hi! I love pudin and it is one of my favorites. If you leave the raisings soaking in spiced rum, they will absorb the rum and it takes the pudin to the next level. I normally put them the night before. Try it!

    I love this video thank you so much. I never made it before and I'm rican lol. But I thought it was made with condense milk or coconut cream but I'm probably wrong cuz I never made it lol but I will this week. Thanks for the recipe😁😁😁

      You are welcome - there are tons of different recipes for this but this is my family’s recipe, which I slightly modified. I have had great feedback on it so would highly recommend it.

    my bread pudding was a little stuck and sugar was getting hard what did i do wrong i let it cool for an hour and then turn it.

      Hi Elizabeth! Maybe your kitchen was really cold so that the sugar crystallized faster. It has happened to me too that it does get a little stuck. Next time if you notice that, place the pan in warm water and let it sit there so that it warms up the sugar a little and then turn it.

    Hi Jeff and Jo. May I ask..What is the purpose for Baño de Maria when you are baking a Flan or Budin? Is it totally necessary? I'm asking because I like to bake but not an expert at it..Lol Did you add raisins? Thanks for sharing this recipe. Delicious!

      Yes, I added raisins, just to please my mom who wouldn't think it was traditional otherwise 😂 And the water bath is important to keeping the temperature in the budin low. If you get it too hot, the eggs will curdle and rather than being creamy, they'll be like scrambled eggs. Hope you give this recipe a try! Anyone can be a great baker, just with a little practice 😊☺️

      Hi Marissa! You can use any bread that you want, it will have a bit of a different taste with the wheat bread but should be good.

    Empezaste mal, porque? Estas haciendo una receta puertorriqueña y estas dando las instrucciones en inglés y sustitulo en español, porque no al contrario en español y sustitutos en inglés, ruso, chino, lo que quieras, eso me indica que eres más americana que hispana. Por hecho no sabes nada de cosina hispana, haces recetas de otros. No me gustas.
