My Traeger has swings that wide under some circumstances. I'd say it is a PID controller, but maybe not the very best PID controller - what can you expect for $200? Yeah, a non-PID would be very volatile. Thanks for your doing this. BTW, how many BBQ grills/smokers do you have?

Built in probe location might be the issue? Hope you do another cook. I also like what you did with the foil for the grease run off. Was the foil ok at the spot where you covered the sear piece?

Well Tom all your vids are great! I just want you and your followers that Pork is best cooked to 130degrees! After it rests it will be 135/140 degrees. Perfect, Juicy well cooked! You will be surprised! Been cooking my pork like this for 8yrs now! Again overy vid you make are great learning vids! Again try it!

If you want some thing more dependable check out Z grills. There pellet grills are well built and have Pd controllers for a reasonable price. www.zgrills.com
The pork looks good. Not that it matters a whole lot with Tenderloin, but I noticed the way you rolled it, you would be slicing WITH the Grain. You would get a more manageable roll and an even more tender bite rolling from the side. This makes a longer rather than thicker roast, and you would be slicing Against the meats Grain. Just an observation...JJ

They have a new grill called the flavor pro which is gas but you can also add wood charcoal or pellets to the flavor drawer. I was leading maybe towards that one sounded interesting.

Controllers without PID use a timed cycle for each temp setting and will have larger temp swings from set point

I had to look closely at the ones at my Walmart. Didn't see a tag indicating clearance, but the price on the box was $200. You might want to double check.

You have to click it to set ... then hold it for 5 seconds to program the temp you want to maintain. Then it shouldn't jump around a lot.
