Stems can be good (if you chop them fine enough!) And I agree that mint is greatly underutilised in western cooking. My Bulgarian brother in law came to visit a few years ago and he made this bean stew with tons of mint in it. It was freaking unbelievable, a bit of spice and heat from chili flake, hearty bean flavour of course and then a cooling mint blast on the backnote.

Love every eggplant dish I have ever eaten! I can easily say the same about fish sautéed with olive oil and garlic. However I have yet to have eggplant and fish cooked together. I gotta tell you my mouth is already watering. Looking forward to see what this looks like in the end, and even more so what it tastes like!! This looked too wet for me personally. I'm more of a thick sauce girl. But idk lol. I understand this doesnt call for thicker sauce, but to each their own. I'd try it anyhow, heck I like any and all pasta (so long as it isnt overcooked lol). I looked this up because tonight I broiled some swordfish, and I took angel hair pasta and made a dish out of it. But I did a light drizzle of a garlic honey soy sauce that I make homemade. Then I toasted some sesame seeds and sprinkled them on top. (I know it sounds weird, but it's so good! Even better with salmon, but swordfish was all I had in the freezer)
I'm all about experimenting with ingredients. From my research this dish or similar ones are quite common in Sicily. Some people add raisins to it as well. The honey would give it that same sweetness. Thanks for comment!
