Much better options for batteries now. Building my own right now, 580 AH lithium for less than 18 hundred with 6k cycles. Also have 84 volt panels on my motor home now, superior to 18 volt panels. Already have 4 extra in storage for a sailboat, 435 watts each. We have plenty of electric to stay off grid.
You show 12 volt panels but with a Mppt controller you can use higher voltage panels which are more efficient and will generate power in lower light conditions. Of course if you use a pulse width modulator controler, which are much cheaper but much less efficient, you have to use 12 volt panels

I want one, and am also 6'6". Unfortunately I won't be able to afford it for at least 3 years.

You can definitely get a dinghy and motor for less than $5000…

Go to Walmart and buy lead acid batteries for 100 to 150 $
