I had exactly the same experience in 2002, there was a funny incident happened. The nomad usually uses dried dungs as fuel/charcoal for their stove. The Lady who were cooking had a little daughter who excitingly helping her mother. She came in with 2 handful of dungs and putting it inside the stove, and casually proceed to stir milk with her bare hands. Her mother didnt see that, and proceeded to mix the milk with hot water tea and salt (suutei tsai) and served all of us. My whole team got a Diarrhea few hours later, and thank God I was exempted. Had to park somewhere in the middle of dessert and let the rest of the team choose their spot in the open space to do their business. I thoroughly enjoyed their dishes. It was the first time I was served a lamb head and tried the eyeball. Fun experience
Watching them I truly miss being in Mongolia 🥰 Mongolian foods are really delicious and the view oh my felts like I was in another time 😂 looking at those vast land I was imagining a Dinosaurs coming out at those bared mountains 😂

well the meat they had is called BOODOG witch is made inside of the goat skin with heated rock. So the meat is made from both side but it's specially tough for other countries people. And it's hard to make so we offer it to our respected guests. But not recommended food for first try 😅 more like if they had HORHOG (witch is made from sheep/not a lamb/ in pressure cooker) they would loved it 🥰it's quite soft but strong meaty taste will still be in there
The meat didn't have fat, that's why it is not as soft as marbled meat. If its smelly it because its fresh meat,most of us eat conditioned meat, and if muslim slaughter their animals is because of blood,we r not allowed to eat/drink blood so we drain the animal from it blood,bloody meat taste delicious but is harmful to us and whatever is harmful to our body god forbid us to consume it, the taste of the meat depend on what the sheep r eating,i tasted different meat in my life(all halal) and it is different, the taste is completely different,plus lamb meat is much softer than sheep. Am not a meat lover but i do like the legs,the face,tongue,liver,heart....etc.
We call that “uhm.” Where I’m from we pile stones up and set them on fire to heat them up. And then spread them out put the meat usually pig on top of it and cover it with banana leaves and bake for hours. Usually up to 5 hours max. We usually do this for visitors, wedding, and funeral.
I've been to mongolia and it's true, the meat is very very tough. The smell of lamb is also very strong, you must know this. It's not a diet city kids are used to.
I know that struggle too. Mongolians have very sharp teeth, i even struggles to eat some meat sometimes. But they just eat it with few chews and i am like my dentist should do something lmao 😂
As a native. You get used to tought meat😅. Or even have some sort of Aquired taste for tough meat even. 😂. Its good for jaw and tooth. Something about ripping a tough but juicy meat from a rib. Its really delicious for me. I have aquired taste for tough meat
