The innovation is not really the mining though, the innovation in bitcoin is the ability to do a transaction with out having to trust a third party. Mining is just a way to give bitcoin value, decentralize, secure the network and a way to distribute the supply, if you can find other ways to do the same thing that is fine, proof of stake do not do these things as good as proof of work do. In proof of stake it becomes very centralized because the more coins you have now the more coins you will have in the future, so the same people will always be in control. With Proof of work there is no way of saying who will have the most power in 5 years as mining is very competitive and the people running most hash now will not be the same in 5 years.
Bitcoin mining energy is only a problem if you're paying for electricity. I get it for free as part of my apartment. Hence no problem, my miners don't cost me a dime to run.
