To you kids at home, DO NOT PLAY WITH MELTED SUGAR. While in culinary school one of my baking teachers had this nasty story. She had a lovely girl in her class who was about a week off from getting married, and it was sugar week...Girly was making some candy and got some molten sugar on her hand and panics a little. For some reason homegirl used her MOUTH to clean it off her hand and ended up inhaling the molten sugar. The sugar then burned a hole through her trachea and they had to call off that wedding for several years. Sugar gets to a point thats HOTTER than boiling water when melted. PLEASE dont not play with molten sugar unless you are an adult and know wtf you're doing.

Also people be careful cause things blow up. It happened to my grandma making caramel or something like that, boiling sugar part for sure. She ended up going to the hospital and missing Christmas. She was making some Christmas time dessert goodies like always, all different kinds. Rest her soul ❤

To get hard crack crunch you need to heat the sugar mixture to 310°F (154°C). At that point take it off the heat - don’t allow to burn or it will taste terrible. This gives you candy canes, lollipops, or anything else you want to make into rock hard candy. I’m a candy-cane maker, and I watch my thermometer very carefully to get to this hard candy stage

Was looking forward to the christmas markets last year before they were banned last minute. That won't happen this year fortunately.
You can still look for them at upcoming Christmas festivals or maybe Fall/Thanksgiving festivals. I know my area is.
Sugar has to be a precise temperature before it will cool and harden. If you want hard crack stage, that usually takes about an hour on the stove and constant stirring. When you’re making it, dip a spoon or something in and then let that drizzle into a glass of water. If it goes hard and it breaks when you bend it, you’ve hit hard crack stage.

I love the regular candy corn and the caramel version and the candy pumpkins you get in the Brach's Harvest mix.
Alton Brown once said that people don’t like candy corn because it’s supposed to be made with corn syrup, the bags you buy at the store are made with corn starch and it’s not as good. I would be interested in trying it homemade to see if there is a difference.

These are two different ingredients that don’t provide the same function. If it was saying corn syrup vs high fructose corn syrup then it would make sense because they both make things sweet but they are different products with different levels of sweetness
Yeah you can't just replace syrup (sugar) with starch. Those are 2 vastly different things, while I don't doubt that Alton Brown did once say something about candy corn I believe that you've misquoted him. EDIT... OK, so I found the original quote. It seems that the mass produced store bought candy corn is made from corn syrup, corn starch, edible wax and food colouring. Real home made candy corn has ingredients like this....
*4 1/2 ounces confectioners' sugar (about 1 1/4 cups)
*1/2 ounce nonfat dry milk (about 6 1/2 teaspoons)
*1/4 teaspoon kosher salt
*3 1/2 ounces granulated sugar (about 1/2 cup)
*3 3/4 ounces light corn syrup (about 1/3 cup)
*2 1/2 tablespoons H20
*2 tablespoons unsalted butter, at room temperature
*1/2 teaspoon vanilla extract
*2 or 3 drops each yellow and orange gel paste food coloring
And yes, looking at these ingredients I have little doubt that both the flavour and texture of the home made candy corn will be vastly superior.

To easily melt candy corn in the microwave, put it in a microwave-safe bowl and add a small amount of water. One tablespoon for every 16 pieces of candy is a good rule of thumb. Stir the candy corn to make sure every piece gets coated with water.

it’s probably not crunchy because you mixed it. you don’t want to mix melted candy being used as a shell it will come out sticky instead. also consider the additives. that’s probably 50% of it too.
You just have to melt the candy to a specific temperature to get a hard crack or soft crack finish when it dries :)
